Here are two recipes, in
time for Purim, from the test
kitchens of Fleischmann's
Margarine. They also meet
American Heart Association
guidelines.

POPPY SEED
POUND CAKE
Makes 16 servings
1 /3 cup poppy seed
1 cup lowfat buttermilk
3 /4 cup EGG BEATERS 99
Percent Real Egg
Product
1 teaspoon vanilla
extract
% cup FLEISCHMANN'S
Margarine, softened
11/4 cups granulated
sugar
21/2 cups all-purpose flour
2 teaspoons DAVIS
Baking Powder
1 teaspoon baking soda
1 /2 cup firmly packed
light brown sugar
2 teaspoons ground
cinnamon
2 teaspoons water
1 /3 cup confectioners'
sugar
In small bowl, stir poppy
seed into buttermilk; let
stand five minutes. Stir in
egg product and vanilla.
In large bowl, with electric
mixer at high speed, beat
margarine and sugar until
creamy. Combine flour, bak-
ing powder and baking soda.
Alternately blend milk mix-
ture and flour mixture into
margarine mixture until
smooth.
Mix brown sugar and cin-
namon; set aside. Pour half
the batter into a greased
12-cup fluted tube pan.
Sprinkle with cinnamon mix-
ture; top with remaining
batter.
Bake at 350 degrees F for
40 to 45 minutes or until
toothpick inserted in center
comes out clean. Cool on wire
rack 10 minutes; remove from
pan. Cool completely on wire
rack. Gradually blend water
into confectioners' sugar un-
til smooth; drizzle over cake.
Nutrition Information per
serving: 265 calories, 193 mg
sodium, 1 mg cholesterol, 9
gin total fat (30 percent
calories from fat), 2 gm
saturated fat, 1 gm dietary
fiber.

HAMANTASCHEN
Makes 5 dozen
23/4 cups all-purpose flour
1 tablespoon DAVIS
Baking Powder
1 /2 cup FLEISCHMANN's
Margarine, softened

/4 cup firmly packed
light brown sugar
1 /2 cup EGG BEATERS 99
Percent Real Egg
Product
2 teaspoons vanilla
extract
2 teaspoons grated lemon
peel
2 cups pitted prunes,
finely chopped
1 /4 cup water
1 tablespoon lemon juice
In small bowl, combine
flour and baking powder. In
large bowl, with electric mix-
er at medium speed, beat
margarine and 1/2 cup brown
sugar until creamy. On low
speed, add egg product,
vanilla and 1 teaspoon lemon
peel. Blend in flour until well
combined. Wrap aiid chill
dough 2 hours.
To make prune filling, place
prunes, water, remaining
brown sugar, remaining
lemon peel and lemon juice in
medium saucepan. Heat to a

boil; reduce heat. Cover and
simmer for 10 minutes.
Remove from heat; cool
completely.
Divide dough in half. On
lightly floured surface, roll
half the dough to 1/8-inch
thickness. With 2Y2-inch
round cookie cutter, cut out
dough and place on greased
baking sheets. Re-roll scraps
as needed. Place 1 teaspoon
filling on each cookie; fold up
the edges of each circle in
thirds to form a triangle.
Pinch the points carefully
together, leaving the center
open and sealing with addi-
tional egg product if needed.
Repeat with remaining dough
and filling.
Bake at 350 degrees F for
10 to 12 minutes or until
lightly browned. Remove
cookies to wire rack to cool.

sodium, 0 mg cholesterol, 2
gin total fat (30 percent
calories from fat), 0 gm
saturated fat, 1 gm dietary
