APPLESAUCE EVER
This mixture turns brown
quickly but produces colorful
flecks of skin.
8 medium apples (a
mixture of red and
green apples)
quartered and cored.
Do not peel.
juice of one lemon
1 /4 cup sugar (optional)
cinnamon to taste
Wash, quarter and core ap-
ples. Place in food processor.
Pulse until roughly chopped.
Add lemon juice, sugar and
cinnamon. Pulse until pureed
or the texture you like.

MEATBALLS
WITH APPLES
Use thick-chunky slices of
apples for this winter dish.
3/4 pound each of ground
turkey and beef
5 tablespoons bread
crumbs
8 dashes red pepper
(cayenne)
2 tablespoons minced,
fresh parsley
6 tablespoons
unsweetened
pineapple juice
6 tablespoons corn oil
3 large cloves garlic,
minced
1/2-inch slice fresh ginger,
chopped
2 tablespoons minced
celery
2 tablespoons minced
fresh red pepper
1 teaspoon dried
rosemary, crushed
2 tablespoons apple cider
vinegar
1/2 cup rich chicken stock
2 whole cloves
3 large Granny Smith
apples, peeled, cored
and thickly sliced
Blend together meat, tur
key, crumbs, 4 dashes cay-
enne pepper, and parsley. Add
3 tablespoons pineapple juice
and mix again.
Heat 3 tablespoons oil and
saute garlic, ginger, celery
and fresh, red pepper. Sprinkle
rosemary and stir. Add vine-
gar and cook for 30 seconds.
Pour into meat mixture and
blend. Shape into 20 balls.
In the same skillet add bal-
ance of oil and heat to me-
dium temperature. Saute
meatballs until lightly
browned on all sides. Pour off
any exuded fat.
Add stock, balance of pine-
apple juice, and cayenne pep-
per. Cook for 30 seconds. Add
cloves and apple slices. Cover
and cook at simmer for 20
minutes. Turn meatballs and
apples once. Gently remove
meatballs and apples to heat
proof serving dish into a
warm oven. Reduce sauce in
skillet by half. Remove cloves

Grease and flour two 9-inch layer
cake pans. In large bowl with
mixer at low speed, blend all
ingredients 30 seconds. Beat at medium speed
2 minutes. Pour into prepared pans. Bake in 350°F
oven 30 to 35 minutes or until cake springs back
when touched lightly in center. Cool in pans
10 minutes. Remove; cool on wire racks. Fill and
frost as desired.
To prepare cake without pudding in the mix,
add 1/2 cup unsweetened cocoa to cake mix.
