It's easier to peel after cooking. Whisk together vinegar, oil, mustard, sugar and salt and pepper. Slice celery root thin- ly and place in glass bowl. Pour dressing over. Let stand for at least 20 minutes. Serve at room temperature. WALNUT SAUCE The Bright Idea: Give a Gift Subscription GREEN BEANS IN ONION-TOMATO SAUCE 2 cups frozen green beans or 3 cups fresh 2 teaspoons walnut oil (or vegetable oil) 1/2 cup water 1 small onion, cut in 1/4-inch dice 1 tablespoon lemon juice 1 tablespoon tomato juice Place green beans and oil in a small heavy saucepan. Cover and cook over lowest setting for 15 minutes, stirr- ing often. Add water, onion, lemon juice and tomato sauce. Stir and cook over low heat for 10 minutes until liquid is almost all absorbed. Microwave at High for 6 minutes or until soft when pressed. Place chestnut puree and butter in- to 4-cup glass measuring cup. Mash with a fork to break up puree which may be firm. Microwave for 1 minute at High to soften. Peel baked potato, cut into chunks and add to chestnut mixture. Pour 5 tablespoons milk over and whip with elec- tric hand mixer until smooth and creamy. Variation: Stir 1/4 cup thin- ly sliced mushrooms and 1 lightly beaten egg into mix- ture. Spoon into small baking dish and bake in preheated 400F oven to puff up and brown, 7-10 minutes. THE JEWISH NEWS 445 Seaside Honolulu, Hawaii 808-926-3354 This sauce for pasta comes from Recco, a small Italian Village. 1 tablespoon unsalted margarine 1/4 teaspoon chopped garlic 1 teaspoon chopped parsley 1/8 teaspoon dried basil 1 teaspoon pine nuts 1/4 cup walnuts fresh ground black pepper 1/3 cup light cream or skimmed evaporated milk, undiluted 2 tablespoons grated Parmesan cheese 1 teaspoon olive oil Melt margarine in small saucepan. Add garlic, parsley and basil and cook over low heat for 2 to 3 minutes. Fine- ly chop nuts in processor and add to garlic mixture in saucepan, stirring constantly so that nuts do not stick to pan. Add cream and cheese and stir over low heat until cheese is melted. Add more cream or milk if needed to make a pouring consistency. Remove from heat and stir in- to cooked pasta.
