Think of it . . . no more waitresses calling in "sick" because of staying out late with the boyfriend . . . no more cooks calling to tell about the "car in service" because he still has a hang- over . . . no more kids telling of "an illness in the family" because they had tickets to the game. And where else is a restaurant that has employees picking things off the floor to maintain its cleanliness at all times? .. . Or waitresses who stop at booths and ask if people want a refill on their coffee instead of walking stiffly by because it isn't their station? To heck with counting the hours until payday . . . there's something much more impor- tant . . . a loyalty that comes from a working together fami- ly bent all-out for its success. This is where the new Pita Cafe recently opened (Dec. 11) next to Deli Unique of Oak Park and Oriental City off the 1-696 expressway. During the day, Ali Chahine is an electrical engineer at Ford's and comes in the evening to relieve and help brother-in-law/partner Chehadi "Charlie" Harajli at the spotless restaurant seating a comfortable 48 with its 11 booths . . . There's also four stools at a fresh raw juice bar with big sellers like healthy carrot among the favorites. Ali's wife Susan Chahine, and his cousin Kay Chahine, sister-in-law Debbie Chahine and her sister Sheila Mason are Pita Cafe waitresses .. . After school, 17-year-old Houssein, and 15-year-old Hassan, sons of Chehadi and Fayrouz, are there every day to help. And if you thought kibbee had to be made only with meat, guess again . . . Fayrouz, responsible for the many Middle Eastern innova- tions and "old country-style" of healthy cooking, is a major factor at Pita Cafe. This "sleeper" Middle Eastern restaurant, with its wide roominess for complete lunch and dinner menus seven days, is the former locale of Sam's Fruit Market . . . In its quiet little way, Pita Cafe has been worming itself into the satisfied palates of communities craving for Mideastern dishes they remember from years back. Pita Cafe can also be class- ified as a restaurant with a heavy concentration on healthy dining . . . so very im- portant in today's scheme of living. Presentation and service are keys to a successful restaurant . . . Without them, the food — no matter how good — just take a far back- seat . . .
