Remove skin from orange and
pull out segments.
Slice open passion fruit and
scoop out pulp. Place in blend-
er or food processor and blend
for 1 minute. Add other ingre-
dients and continue to blend.
Add salt if desired. Chill and
serve with salad.

FRESH TUNA SALAD
1 pound (2) tuna steaks
cut to even thickness
1 /2 cup dry sherry (sweet)
2 whole garlic cloves
1 /2 cup celery, chopped
1 /2 cup green onions,
thinly sliced
1 tablespoon lemon juice
1 /2-1 cup no-cholesterol
mayonnaise
Bake tuna with dry sherry
and garlic in a 350F degree
oven, covered for 10 minutes.
Uncover, turn tuna steaks
and bake for 10 to 15 minutes
or until done. Remove tuna
from pan but mash garlic
cloves into remaining juices
and reserve. Cool for 20 min-
utes and chunk tuna into
small pieces. Add vegetables,
tuna juices, and mayonnaise,
mix well. Refrigerate until
serving.

MARINATED
TURKEY BREAST
1 large (6-8 pounds)
turkey breast,
deboned without skin
into two filets
Marinade:
3 tablespoons tamari
(less sodium) soy
2 tablespoons fresh lime
juice
12 cloves garlic smashed
and peeled
Y2 teaspoon ground
cumin
8 slices fresh ginger
Prepare marinade in large
shallow bowl (microwave safe)
and covering filets with mari-
nade. Cover tightly and mari-
nade for at least 2 hours.
Cook filets with marinade
in microwave oven, covered
for about 20 minutes at High
with thick part of turkey
breast closest to the rim of the
bowl. Remove filets to a
broiler and cook until brown.
Slice and pour additional
marinade on top.
