This pivotal area may have been tidied up but never organized. 1992 can be the year to get rid of tired and outdated products and to in- troduce new ones. Don't get too sentimental about old pots and cracked dishes. Times have changed and it's time for a change. 1992 CLEAN-SWEEP 1. Recycle all plastic bags. They should be used more than once. The lock-type bags can help organize the freezer, cabinets, etc. After opening frozen vege- table bags, place bag in lock- type bag for neatness and as added prevention against freezer burn. Two one-pound boxes of brown, powdered sugar, etc., snugly fit in the 1-quart size lock-style bags and the bak- ing soda box in sandwich-size plastic bag. 2. Organize gadgets/tools by use. Ravioli roller in the rear, whisk within reach. The same for spices; paprika should be prominent; saffron suppressed. 3. Disposal dates for baking powder, baking soda, yeast, etc. are on the bottom or back (don't ruin a recipe with inac- tive products). And while you're looking at dates, read the ingredients on the packages. Palm, coconut oil, large amounts of sodium and whole egg products should be given the heave-ho. 4. Routinely separate and put egg whites in freezer for extended life. Eggs in the car- ton stay fresh for 3 weeks. Bulk spices (combine basil and thyme together), coffee and nuts stay longer in the freezer, too. 5. Do an inventory of your pots, serving dishes, flatware; etc. Spoons bent from a bout with the garbage disposal have no use. Teflon-coated pans do wear out. Infrequent- ly used heavy cast-iron prod- ucts can be kept to the rear, while everyday microwave- safe cooking/serving vessels should be near, along with a roll of paper towel and plastic wrap. Soak kitchen towels in a bleach/water solution for 20 minutes before washing. Try rolling them for more space. 7. Add new vegetables/ fruits to your salad: radicchio, Bok choy, carambola, passion fruit, etc. Keep lettuce, celery, carrots, radish, etc., washed and ready for use. Large salad spinners keep them fresh and crisp. 8. Remove all skin from poultry and try marinading a turkey breast instead of a cut of beef. Eat fresh fish in sal- ads and use low-fat/no-fat dressings prepared with a creative touch of your own. 9. Revamp entire recipe file, cut out interesting newspaper recipes, bone-up on latest nu- tritional news and convert family favorites using less fat and sugar. 10. Have more people over to dinner in 1992. After all this organizing, it'll be a breeze. NEW YEARS' SWEET POTATO BALLS 3 cups cooked sweet potatoes, mashed 1 /4 cup brown sugar 2 tablespoons margarine 1 tablespoon orange or pineapple juice 10-12 large marshmallows grated coconut Mix sweet potatoes, sugar, margarine and juice. Form in- to a ball by putting a marsh- mallow in the center of one heaping tablespoon of sweet potato mixture. Be sure to cover all the marshmallow with mixture. Roll in coconut and place on ungreased cookie sheet. Bake in 325F degree oven for 5 to 10 minutes. These freeze well but should be thawed before bak- ing. Yield: 10 to 12 servings. CARAMBOLA SALAD WITH PASSION FRUIT DRESSING Dressing: 3 passion fruits 8 tablespoons lemon juice 3 tablespoons sugar 1 cup vegetable oil Salad: 1 head radicchio lettuce 1 head iceberg lettuce 2 cups sliced carambolas (they come tart or sweet) 1 cup orange segments (cantaloupes can be used) Wash and tear lettuce into bite-size pieces.
