purpose potatoes,
peeled
1 large onion
2 eggs (cholesterol free
egg replacements can
be used)
3-4 tablespoons matzah
meal
Pinch of baking soda
1 teaspoon salt (no-salt
substitutes can be
used)
Y2 teaspoon white pepper
(or to taste)
vegetable oil for frying

(boiling, frying, roasting and
mashing); Round Reds — Are
good for boiling, steaming and
roasting.

1. Potatoes are best if stored
in a dry, dark area with cool
temperatures (between 45
and 50 F degrees) with good
air circulation.
2. Light is the enemy of po-
tatoes, frequently causing
green spots and a possible bit-
ter taste.
3. When refrigerated the
starch is converted to sugar
which caramelizes, changing
both the color and texture.
High sugar potatoes also tend
to soak up excessive amounts
of oil when fried.
4. The best potatoes for
freezing are those that have
been cooked, such as mashed,
baked, stuffed or fried patties.
A maximum storage time is 2
months at 0 degrees F.
5. One pound potatoes
equals:
about 3 medium potatoes
2 cups mashed
3 cups - peeled and sliced
2 1/2 cups peeled and diced
6. Peeled potatoes turn dark
if not cooked right away. To
protect their whiteness, toss
them with ascorbic acid mix-
ture or a little lemon juice.
Prolonged soaking in cold
water is not recommended.
7. Russets/Idahos — Are

Grate onion and set aside.
Beat two eggs in a bowl and
set aside.
Peel potatoes and place in a
large bowl of cold water laced
with 1 tablespoon lemon
juice.
Working quickly, grate the
potatoes using the small
holes of a hand-held grater or
a food processor grater.
Suspend a strainer over a
bowl - and transfer grated
potatoes to strainer. Let stand
while juices drain into bowl.
(Do not discard juices)
Place drained potatoes in
the egg mix bowl, stir to coat
potatoes. Pour off potato juice
reserving starch on the bot-
tom of bowl and add to grated
potatoes.
Stir-in grated onions, bak-
ing soda, matzah meal, salt
and pepper.
Cover bottom of an 8-inch
heavy skillet with 3 table-
spoons of vegetable oil. When
oil becomes hot, drop gener-
ous tablespoons of potato bat-
ter into hot oil. Do not crowd.
Fry until golden brown and
turn. Fry remaining side to
golden brown. Add oil as
needed.
Drain on paper towels. Pan-
cakes can be kept warm on a
cookie sheet in the oven un-
