MANDELBROT
11/2 cups finely ground
almonds
3 /4 cup vegetable
shortening
1 cup sugar
1 tablespoon grated
orange peel
8 ounces egg substitute
(equivalent to 4 eggs)
1 teaspoon vanilla
41/2 cups unbleached
flour
11/2 tablespoons baking
powder
1/2 teaspoon salt
1 teaspoon ground
cinnamon
1 /4 teaspoon ground
cloves
1 /4 teaspoon ground
coriander
1 /4 teaspoon ground
nutmeg

Frosting
In a large frying pan with
a non-stick surface, heat the
finely ground almonds. Keep
them moving around in the
pan so they brown, but do not
burn. When they are golden
brown and toasted, turn off
the heat. Cool before mixing
with the other ingredients.
Heat oven to 350 degrees.
Spray 3 cookie sheets with
vegetable spray. Set aside.
