There should be about 2 cups. Place in food processor with sugar and water and chop coarsely. Spoon into a glass bowl and cover with a cloth. Let stand at room temperature, stirring daily, for 3 days. If kitchen is hot, refrigerate after 24 hours. Line a sieve with 2 layers of dampened cheesecloth and set over a pan of stainless steel or other nonreactive material. Let drip into pan without pressing pulp. This will take several hours. Dis- card seedy pulp. Bring syrup to a gentle simmer (180) over medium-low heat. Reduce heat to low and heat to no more than 200, for 3 minutes. Skim off any foam and funnel into a sterilized dry bottle. Cool, then cap or cork and store in refrigerator. Makes about 1 3/4 cups. Call 354-6060 80 FRIDAY, OCTOBER 4, 1991 BAKED PINEAPPLE ACORN SQUASH (Makes 6 servings) 3 acorn squash, halved lengthwise and seeds removed 2 8-oz. cans crushed pineapple 3 tablespoons Fleischmann's margarine 1 /4 c. firmly packed light brown sugar 1 tbs. Grey Poupon Dijon mustard 1 /2 c. dark seedless raisins 1 /4 c. pecans, chopped Prick squash skin in several places with fork; place cut- side down in 2 quart oblong baking dish. Drain pineapple, reserving Y2 cup juice. Pour reserved juice over squash. Bake, uncovered, at 350 degrees for 30 minutes. Meanwhile in small saucepan, heat margarine, brown sugar and mustard un- til melted and smooth. Remove squash from oven; turn squash halves over. Mix pineapple and raisins; spoon mixture into each squash half. Drizzle brown sugar mixture over squash. Bake 30-40 minutes more or until squash is tender. Sprinkle with pecans during last 5 minutes of baking.
