HOFMAN Special to The Jewish News F or good health, we are urged to increase the fruits and vegetables we eat. Use fresh or cooked, but eat them, say nutritionists. That's why we find that the produce aisle in the market is taking up more of our shop- ping time and dollars. Picking out the run-of-the- mill fruits and vegetables is easy. Red and golden apples, the first of the fall crop should be firm, crisp and juicy, grapefruits and oranges should be unblemished and heavy for size, pears clear- skinned and firm, yielding very slightly to pressure if ripe. But what of the exotic and unusual which are mak- ing steady inroads into our markets and menus? Frieda's of California is one of the first companies to pro- mote unusual produce. A newsletter, published every 2 months, describes some of the "new" fruits and vegetables and gives recipes for cooking. When you buy a product with Frieda's purple label, there is a guarantee that it is the best — if you don't agree, they will refund your money (mail back the label and the store where purchased). Let's begin with squash, as American as Thanksgiving — we thought. Hard-shelled winter squashes are available almost all year round these days and still remain a tradi- tional part of fall and winter menus. But, there may be over a dozen varieties at var- ious times in stores, some new and intriguing. Karen Caplan, President of Frieda's Finest, says that they are sell- ing over 20 kinds all over the country. Austrian Blue — this beau- ty has a bluish-green hard shell, big and squarish in shape. Inside the flesh is deep, orange and sweet. Bake it whole or quartered, steam or microwave. Delicata — ever seen a squash which looks like a very thick cucumber? This one does. Green and tan- striped with longtitudinal grooves, it's pretty as a pic- ture. Meat is yellow and the taste is mild with a flavor like fresh corn. The large cavity is perfect for stuffing. Jack-Be-Little — you can ac- tually eat these perfect miniature pumpkins as well as decorate the table with them. They have a large cavi- ty which makes them perfect for stuffing or serve as in- dividual soup containers (kids love them — even if they won't eat the usual squash, they'll devour this). The orange meat gives off a slightly sweet flavor. Turban — wonderful for centerpieces as well as for eating, this looks like a flat- tened ball with another ball on top. The bright orange shell is streaked with cream, green or white and the flesh is rich and sweet. Try using the pulp for soup and the shell as a serving container for a delicious presentation. Lady Apples are 'mini- apples.' They are green to yel- low with a rose blush and are sweetly delicate in flavor. Perfect for baking or poach- ing, in pies, • sauces or to decorate a Shabbat dinner platter. J.R. Brooks and Son, Inc. are a Florida company which specialize in a line of tropical produce. Browning along the edges is OK. Malanga — is a long shaped root vegetable with a furry peel. It is a starchy tuber with a beige colored flesh. Native to African tropics, peel and cook like potatoes or use as a thickener for soups and stews.
