damom, lemon juice and
grated rind and mix well.
Turn into prepared casserole
and sprinkle with cinnamon,
remaining cardamom and
drizzle with honey. Bake in
preheated oven for 45
minutes or until nicely
browned and firm in center.
Serves 6.

TEAROOM "PEACHES"
3 /4 cup butter, softened
1 /2 cup milk
1 cup sugar
2 eggs
3 /4 teaspoon baking
powder
% teaspoon vanilla
extract
33/4 cups all-purpose flour
2 /3 cup apricot jam
1 /4 cup semi-sweet
chocolate, melted and
cooled
1 /3 cup ground hazelnuts
or almonds
2 teaspoons orange juice
1 /4 cup water
1 /3 cup red sugar
% cup yellow sugar
cinnamon stick
Mix butter, milk, sugar,
eggs, baking powder, vanilla
and 2 cups flour in a large
bowl. Blend 30 seconds at low
speed, scraping bowl con-
stantly. Beat 1 minute at
medium speed. Stir in re-
maining flour. Shape dough
into smooth 3/4-inch balls
(each will make a "peach"
half). Place 1-inch apart on
ungreased cookie sheet. Bake
in preheated 325 degree oven
for 15 to 20 minutes or until
bottoms are light golden.
Cool.
Place tip of a small, sharp
knife in center of flat side of
the cookie. Carefully turn
knife and rotate cookie to
make a hollow. Repeat with
all cookies and reserve
crumbs. Mix 1% cups crumbs
with jam, chocolate, nuts and
orange juice. Fill cookies with
this "pit" mixture. Place two
cookies together to make a
"peach". Brush each "peach"
very lightly with water. Im-
mediately roll one side in red
sugar for a blush. Sprinkle
yellow-orange sugar over to
cover completely. Set aside to
dry.
Insert small piece of cinna-
mon stick in top of each to
make a stem. Makes approx.
5 dozen.
To make red sugar: Mix a
few drops red food coloring in-
to V3 cup sugar in a shallow,
ovenproof dish. Heat in 400
degree oven until dry, stirring
occasionally.
For yellow-orange sugar,
mix 2 drops red food color in-
to % cup sugar. Add enough
yellow to make a peach color.
Repeat oven process to dry. CI
