Stir in raisins. Turn into a greased and floured 10-inch fluted tube pan spreading batter evenly. Bake in a 350 degree oven 55-60 minutes or till cake tests done. Cool cake in pan 10 minutes; invert on wire rack and cool cake completely. TRADITIONAL HONEY CAKE 2 teaspoons instant coffee crystals dissolved in 1 cup water 3/4 cup vegetable oil 1/2 cup sugar 1/2 cup honey 3 eggs 1 teaspoon vanilla 2 cups flour 1 tablespoon baking powder 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground cloves 1/2 cup chopped pecans powdered sugar In a large mixer bowl com- bine oil, sugar, honey, eggs and vanilla. Beat with an electric mixer on low speed till well mixed. Beat on medium speed 1 minute more. Combine flour, baking powder, cinnamon, soda, salt and cloves. Add dry ingre- dients alternately with coffee to egg mixture. Beat 2 minutes. Stir in pecans. Turn into a lightly greased and floured tube pan. Bake in a 350 degree oven 40-45 minutes. Cool in pan on wire rack 10 minutes. Remove and cool. Sprinkle with powdered sugar before serving.
