esearch in trying to
find the right key to
the door of success in
the restaurant business many
times takes a long while .. .
Those too impatient in open-
ing their place seldom have
the luxury of time to apply
what should be a more
thorough study. .
In the case of Maria and led
Gatzaros and Jim and Vicki
Papas, they were able to take
a while before opening what
they wanted, a seafood opera-
tion . . . Of course, enjoying
the leisure and security of not
being forced to rush helped
quite a bit . . . As owners of
Pegasus Taverna in Greek-
town and Pegasus in the
Fisher Building, the Gatzaros
and Papas couples spent a
long time in surveillance of
their desired type of restau-
rant . . . having the idea and
visiting New Orleans for a
couple of years to achieve
their mutual ambition.
The result is Fishbone's
Rhythm Kitchen Cafe on
Monroe, corner of Brush, a
block west of the main Greek-
town area, with what they
felt were the best Creole-
Cajun dishes of all the
"Nawlins" places visited by
them . . . Theirs is another
restaurant in downtown
Detroit with a healthy at-
titude and brighter future
outlook . . . and it certainly is
much nicer to write about
successful restaurants than
closings . . . The Fishbone's
concept has catapulted its
listing into one of the nation's
top 100 by nationally-
distributed Restaurant and
Institution Magazine.
Where did the name Fish-
bone's come from? . . . He's the
tuba-playing chef, Mr. Fish-
bone's, on the restaurant's
menu . . . and he couldn't
have a more likely setting for
his open-rhythm kitchen.
The high ceilings with their
pipework and ducts are like so
many of the buildings in New
Orleans, and pictures of jazz
greats are on all walls .. .
When in town, Fishbone's is
a "hangout" for many of them
. . . All the antiques are from
"Nawlins" . . . and the New
Orleans French Quarter look
of authenticity is enhanced by
wooden shutters, wrought-
iron grillwork, heavy square
columns, tiny multi-colored
tiles, musical instruments,
gas lamps and wash basins
. . . It is evident that a lot of

painstaking thought was
given to authentic detail .. .
Even cyprus wood doors were
brought in from New Orleans.

opened
December 1987, Fishbone's
Rhythm Kitchen Cafe seats
about 300 in the main dining
area and another 300 in an
atrium where Sunday brunch
is held by the Guinness Book
of World Records' tallest in-
door waterfall at 114 feet.
Originally built in 1881 for
offices, warehouse and pro-
cessing plant of the Ferry
Seed Co., the entire block-
long sturdy brick structure
houses the International
Center Building in which
Fishbone's is located .. . Now
being built in the other half
of the building will be the
new Atheneum Suites Hotel
scheduled to open in January.
Jim and Ted, also real
estate developers, bought the
Ferry Seed Building in 1985
and renovated it for offices, an
excellent banquet facility
with its own huge private kit-
chen among other fine ameni-
ties, overlooking the atrium
with its nine-story active
waterfall, skylights, marble
flooring and garden areas .. .
The atrium is surrounded by
office and retail space in a U-
shaped pattern so that shop-
pers and business people can
look over the balcony or out
their windows to see the
mammoth waterfall and hap-
penings below.
Fishbone's Rhythm Kitchen
Cafe has become the topic of
much talk because of its
seemingly always bustling at-
mosphere with effervescent
waitpersons like Donna Gor-
don in white aprons and black
shirts or pants.
Mr. "Big Daddy" Fishbone
swings his tuba with a hot
beat in the Mardi Gras
spirit that always seems to
prevail at his downtown
Detroit restaurant . . . Fish-
bone's Rhythm Kitchen Cafe
is a come-back-again-and-
again experience . . . the
epitome of restaurant success.
CONGRATS . . . to Merrill
"Chick" Marks . . . on his
40th birthday . . . and
mother-in-law Sybil Abrams
of Michigan National Bank
says wife Judy couldn't think
of a better gift than the one
he recently received . . . his
first hole-in-one . . . While
here visiting from Hartford,
Conn., ex-localite Chick went
to Southfield's Evergreen
Hills Golf Course the day
before his birthday with
brother-in-law Larry Zim-

berg, Ray Zimberg and Paul
Cronk . . . On the fifth hole,
with a three iron, Chick got
the ace he'll never forget.
"THIS HAS to be the par-
ty of the year," said Ernie
Palombo, host at Ginopolis',
who knows a thing or two or
three or more about good par-
ties . . . He used to throw
some terrific wingdings
himself while bossman at
Palombo's on Eight Mile bet-
ween Evergreen and Lahser
years back.

tinuous list of the popular
dining spot's many festive bir-
thday soirees.
Almost 1,000 people went
through the doors at Ex-
calibur and enjoyed the usual
sumptuous feast put out by
owner/chef Marty Wilk and
his staff . . . Susy and Dan,
musical regulars on the stage,
were a quartet the entire
evening as the group of four
put out a lot of music for the
many merrymakers . . . and
even a first for those who
danced to "America" sung by
one of the quartet.
Balloons hung from the
ceiling tailed with silver and
black streamers as the Ex-
calibur mainstays . . . Fran
Ober, excellent office
manager; John Cetrone, now
evening manager but still
available to help behind the
bar if needed; personable
General Manager Victor Daz-
baz; and Marty . . . joined
their hard-working, efficient
wait staff in making sure
everyone had fun.
So many people having a
good time . . . Restaurateurs
Peter Ginopolis and Ernie
Palombo of Ginopolis'; Nick
Sorise of Nicky's; Sam Mes-
sina and Ernie DeMichele of
Ernesto's; and Manuel
Chavez of Ristorante di
Modesta and Manuel's.
"I feel like I'm working,"
said the effervescent Pete
Ginopolis as he went around
greeting people with that big
personality-plus smile of
enthusiasm.
Even a big celebration for
Yael Goldbaum and Ethan
Gross who met at. Excalibur
where she is day hostess .. .
and recently became engaged
