saucepan and bring to boil,
stirring to dissolve sugar. Add
cherries and simmer for 3
minutes until slightly soften-
ed. Pour hot cherry mixture
over fruit in bowl. Serve
warm or at room tempera-
ture. Serves 6.

BLUEBERRY SLUMP
1 pint blueberries,
washed and picked
over
1 tablespoon sugar
1 teaspoon grated lemon
rind
2 tablespoons water
1 1/4 cups flour
2 teaspoons baking
powder
3 tablespoons butter
about lh cup milk
Pour berries into saucepan
with sugar, lemon rind and
water. Cook gently over me-
dium heat for 3 to 4 minutes
until juice starts to run. Set
aside. In food processor, pro-
cess flour, baking powder and
butter to consistency of coarse
breadcrumbs. Add enough
milk to make a soft dough.
Turn onto floured board and
pat into a rectangle about Y2
inch thick. Cut into rough
1-inch squares. Reheat berry
mixture to simmer and lay
dough squares on top. Cover
pan and cook gently over low
heat for 10 minutes. Spoon in-
to serving bowl and serve hot.
May be spooned over ice
cream or frozen yogurt.
Serves 6.

RED CURRANT FOOL
1 small package (3 oz.)
vanilla pudding
1 pint red currants
2 tablespoons water
3 tablespoons sugar or
honey
1 /2 cup vanilla yogurt
Prepare vanilla pudding ac-
cording to package directions.
Chill. In small saucepan,
combine red currants, water
and sugar. Cook gently until
tender, about 10 minutes. Re-
move from heat and add extra
sugar or honey if desired.
Whirl in blender to puree and
chill. Combine yogurt with
vanilla pudding, stir in red
currant mixture and spoon
into dessert dishes. Serves
6 to 8.
Note: any berries may be
substituted for red currants.
Whipped cream may be sub-
stituted for vanilla yogurt.
