Remove from oven. Mean-
while, in small bowl combine
oil and minced garlic. Place 1
sheet phyllo on flat surface.
Brush lightly with garlic oil
and sprinkle with 1 table-
spoon Parmesan. Repeat with
remaining phyllo sheets, oil,
and Parmesan. Place layered
phyllo sheets, centered, in an
ungreased 12-inch round piz-
za pan. Fold in excess dough
at corners toward center,
pleating as necessary to fit
round shape of pan. Layer
mozzarella, red pepper, basil,
tomatoes, and roasted garlic
cloves over phyllo. Sprinkle
with remaining Parmesan.
Bake on bottom rack of oven
at 400 for 15 to 20 minutes or
until golden brown. Cool
slightly before serving. Garlic
should be squeezed onto fo-
caccia and peels discarded as
you eat.
Makes 6 servings.

SPICY SUCCULENT
TURKEY LEGS
2 turkey drumsticks (12
ounces each)
1 to 2 cups dry red or
white wine
1 teaspoon black pepper
1 teaspoon salt
2 teaspoons dried
rosemary leaves

1 teaspoon dried
tarragon leaves
1 teaspoon dried sage
leaves
1 teaspoon onion powder
8 to 12 cloves fresh garlic
Skin turkey drumsticks and
place in non-plastic container
with tight-fitting lid. Pour
wine over turkey and sprinkle
with half the pepper, salt,
rosemary, tarragon, sage and
onion powder. Add garlic
cloves and cover dish. Let
marinate for 2 hours. Turn
drumsticks over and sprinkle
with remaining herbs and
spices. Redistribute garlic
evenly and marinate for 2
more hours, or overnight.
Transfer turkey and
marinade (including garlic) to
covered baking dish; bake at
350 for 2 hours. (Turkey can
also be cooked on top of stove,
covered, over medium-low
heat.) Turn meat half way
through cooking time. There
should be plenty of gravy, and
meat should fall off the bones
easily. Vegetables or cut-up
potatoes may be added during
last 1/2 hour of cooking time if
desired.

Makes 2 servings.
Note: Uncooked meat
should be marinated in re-
frigerator for safety's sake. ❑

Fresh Apricots
Are A Sweet Treat

Fresh apricots make sum-
mer entertaining as enjoyable
as the season itself. As a
sweet treat for a backyard
barbeque, or as part of a
festive end to a dinner with
friends, fresh apricots are a
delightful addition.
Make this colorful make-
ahead dessert part of your
party plan. Frozen Apricot-
Strawberry Torte layers
flavorful fresh fruitg-with cool
vanilla ice cream and lady
fingers, and is a real time
saver. The torte can be
assembled a day in advance.

6 slices each; lay on pan bot-
tom, pinwheeling around
strawberries. Line ladyf-
ingers around sides of pan;
brush with 1/4 cup marsala.
Stir remaining marsala into
softened ice cream. Evenly
spread 2 cups ice cream mix-
ture on top of arranged fruit;
freeze for 15 minutes. In food
processor or blender, process
remaining apricots to small
chunks. Reserve, and process
remaining strawberries in
the same manner.

FROZEN APRICOT-
STRAWBERRY TORTE
11/2 packages soft
ladyfingers (4 1/2
ounces)
1 cup marsala wine, or 1
cup apricot nectar
and 1 tsp vanilla
extract
6 cups softened vanilla
ice cream
11/s pounds fresh
California apricots (10
apricots)
1 1/2 cups sliced fresh
strawberries
Line the bottom of an 8-
inch springform pan with
waxed paper. Place 4 straw-

softened ice cream; return to
freezer for 15 minutes. Repeat
with processed strawberries
and remaining softened ice
cream; arrange remaining
ladyfingers on top of ice
cream to seal torte.
Cover with plastic wrap and
freeze 3 hours or overnight. To
serve, invert springform pan
on serving plate, and wipe
outside of pan with a warm,
wet cloth to loosen seal.
Remove sides and bottom of
pan; peel off waxed paper.
Serve immediately. Makes 12
servings. ❑
