and let pressure drop of its
own accord.
Prepare glaze: Melt rasp-
berry preserves in microwave
and stir in lemon juice and
mustard. Arrange hens on
ovenproof platter, brush with
glaze and brown in preheated
broiler, 3 to 4 minutes. Gar-
nish with parsley. Serves 4.
To make couscous: There
should be about 1 1/2 cups li-
quid left in pressure cooker. If
needed, add a little more
water. Bring to boil, remove
from heat and add 1 cup
quick-cooking couscous.
Cover and let stand 5 min-
utes. Spoon around Glazed
Cornish Hens.

Oranges, watercress and
grated orange rind
for garnish.

Pound chicken pieces to about Y.:-inch thickness. In small
bowl, beat together 1/4 cup margarine. garlic and parsley
until blended. Spoon about 1 tablespoon margarine mixture
onto center of each chicken piece; roll up. Secure with
toothpicks. Dip chicken rolls
in
cracker meal.
EGG BEATERS: roll in
In skillet.
over medium-high heat. melt remaining mar-
garine. Add chicken rolls: cook. turning frequently, for 15
minutes, until browned on all sides and done. To serve.
remove toothpicks. arrange chicken on serving platter:
with watercress. orange rind and oranges. Makes
6 garnish
servings.

BASQUE BEEF STEW
11/2 pounds boneless beef
chuck, cut in 1 1/2 inch
pieces
2 tablespoons all-purpose
flour
2 tablespoons oil
4 oz. beef sausage, sliced
4 medium onions,
quartered
1 teaspoon prepared
chopped garlic
1 /4 cup tomato paste
8 oz. mushrooms,
quartered
3 /4 cup oil-cured black
olives
1 1/4 cups dry red wine
6 oz. jar marinated
artichoke hearts, well
drained
salt and pepper
Dredge beef cubes in flour.
Heat oil in pressure cooker
and brown beef on all sides.
Add sausage, onions, garlic,
tomato paste, mushrooms,
olives and wine. Stir well to c
remove any brown pieces ad-
hering to bottom of cooker.
Close cover securely placing
pressure regulator on vent
pipe according to manufac-
turer's directions. Bring up to
pressure and cook for 15 min-
utes. Reduce pressure quickly
by placing under cold runn-
ing water. Before serving, stir
in artichokes and correct sea-
soning. Serves 6.
