I was distressed to read
Beverly Price's response to
my Passover article published
in your March 15 issue. Her
nutritional information is
perfect. But alas her eyesight
needs work. She suggests I
don't have my "facts straight"
and don't know that "fat
makes people fat."
In fact, the article headline
states, "A Seder Feast
Without The Fat." The article
recommends using non-fat
chicken broth instead of any
oil or fat to make the stuffing.
It suggests using non-fat
chicken broth instead of milk
or cream in the souffle. It
urges orange juice over milk
or fat in making the pudding
for the trifle, and so on.
I have maintained the
"lowest possible fat" position
for years. That is why I have
been chosen by nutritionists
to lecture at hospitals and
universities on the subject.

contain less than 5 percent
saturated fat and less than 13
percent overall fat — both
well below the 10 percent and
30 percent amounts recom-
mended by nutritionists like
