Beat on low speed to blend. In- crease to high speed and beat until firm peaks form when beaters are lifted, about 10 to 15 minutes. Spoon into the cool crust. Cover and freeze until firm at least 6 hours. Strawberry Sauce: 10-ounce package frozen sliced strawberries 3 tablespoons frozen undiluted orange juice concentrate 1 tablespoon currant jelly 1 cup fresh strawberries, sliced Slightly defrost strawber- ries and orange juice concen- trate. Puree strawberries and concentrate in food processor with the metal blade. Stir in currant jelly. Spoon into a bowl and stir in fresh berries. Serve cold. Sauce may be refrigerated overnight. Serve torte directly from the freezer, as it will not be frozen solid. Cut in wedges and serve with the straw- berry sauce. Serves 12. COCONUT . MACAROONS PA cups flaked coconut 1 /3 cup sugar 3 tablespoons matzah meal dash of salt 2 egg whites 1/2 teaspoon Passover almond flavoring Combine coconut, sugar, matzah meal and salt in a mixing bowl. Stir in egg whites and almond flavoring; mix well. Drop from a tea- spoon onto a lightly oiled bak- ing sheet. Bake at 325 degrees for 20 to 25 minutes, or until edges of cookies are golden brown. Remove from baking sheet immediately to cool on a rack. Makes about 18. CHOCOLATE POPPYSEED TORTE 6 ounces semisweet chocolate 3 /4 cup poppy seeds (3'/2 ounces) % pound margarine 3 /4 cup sugar 6 large eggs, separated 1 /3 cup orange marmalade Oil and line the bottom of a 9-inch springform pan with waxed paper. Oil again and sprinkle with potato starch. Melt chocolate in the top of a double boiler or in the microwave oven. Allow to cool. In a large mixing bowl using an electric mixer, cream margarine and sugar. Add egg yolks, one at a time, beating after each addition. Beat in chocolate. Stir in pop- py seeds. In a separate bowl, beat egg whites until stiff peaks form. Stir a small amount of whites into choco- late mixture to lighten it; then gently fold in remaining whites. Spoon into prepared pan. Bake at 350 degrees 40 to 50 minutes or until a toothpick inserted near center comes out almost clean and top is cracked and crus- ty. A little bit of chocolate on toothpick means cake will be moist and fudgy. Do not overbake. Remove to rack; cool 10 minutes. Invert pan on rack and pull off paper. Cool com- pletely. Chill first; then cut cake in half horizontally. Place top layer, cut side up, on serving plate lined with waxed paper. Spread with marmalade. Set bottom layer smoothest side up on top. May be frosted or sprinkled with powdered sugar. Freezes well.
