e all know of some-
one, thousands of
miles away in the
Saudi Arabian desert, who
won't be home for Passover.
Although we cannot cele-
brate with loved ones, if and
when the ban on sending
packages to the Gulf region is
lifted, we can provide a link
to home by sending packages
of "comfort" foods — those
familiar "memory" dishes
that provide nourishment for
the soul as well as for the
body. They are synonymous
with the tradition of family
gatherings and happy times.
Sending cakes and cookies
overseas is not like sending
care packages to kids in col-
lege. "When sending food to
the troops," says Sue Templin,
a supervisor at the U.S. De-
partment of Agriculture "It's
especially important that
they receive food presents and
not food problems." That's
why USDA scientists have
come together with the Postal
Service and military advisors
to set safety rules for overseas
food packages.
At the top of the list of foods
not to send are perishables
that need refrigeration, but
canned meats and fish are
safe if they are eaten immed-
iately after opening. Attach a
note to cans that if they
arrive swollen or damaged
"do not eat since bacterial
contamination is present."
Don't send moist cakes and
cookies; they are susceptible
to molds. Delicate cookies,
even if carefully packed, prob-
ably will arrive as crumbs.
Matzot are fine since they are
dry, but do not send choco-
late-dipped matzot or any
item containing chocolate
since chocolate will melt in
high temperatures.
There are plenty of goodies
you can send. Dense, dry
baked items such as fruit
cakes, wrapped tightly in wax
paper, then foil (cool comp-
letely before wrapping); dry
cookies carefully packed be-
tween layers of foil in tins;
dried fruits, canned nuts, in-
stant soups, hard candy and
fruit drink mixes are all okay.
All recipes are kosher for
Passover.
MANDELBROT
1 cup toasted walnuts

juice and grated peel of 1
orange
juice and grated peel of 1
lemon
11/2 cups matzah cake
meal
1 tablespoon potato
starch
Topping: 1 tablespoon
cinnamon mixed with
2 tablespoons sugar.
Preheat oven to 350F.
Lightly oil two loaf pans, ap-
prox. 7 1/2 by 3 1/2 by 2 inches.
Chop nuts in food processor to
medium consistency. Turn in-
to a large bowl. Add eggs,
sugar, oil, orange and lemon
juice and grated peel and mix
well. Sift cake meal with po-
tato starch and add gradually
until completely combined.
Divide dough between two
prepared pans or shape each
half into a long loaf and place
on lightly greased cookie
sheet, about 3 inches apart.
Sprinkle lightly with cinna-
mon-sugar mixture. Bake in
preheated oven for 45 min-
utes or until golden brown.
Remove from oven and cut
each loaf into slices about 3/4
inch thick (if too thin, they
may break in transit). Ar-
range mandelbrot, cut side
down, on cookie sheet. Bake
for 30 minutes longer or until
lightly browned and toasted.
Turn after 15 minutes to en-
sure even crisping. Makes 24
to 28 pieces.
Note: To toast walnuts, ar-
range them in one layer on
toaster oven tray. Stir often to
toast on all sides. Watch care-
fully to avoid scorching.
SPICED WALNUT
COOKIES
3 cups walnuts, finely
ground
3 /4 teaspoon ground
cloves
1 teaspoon cinnamon
tiny pinch of white
pepper
3 /4 cup sugar
2 eggs, beaten
1 tablespoon grated
orange rind
Preheat oven to 350F. Dust
