bake 15 minutes longer to
crisp. Cover lightly with foil
if browning too much.

PESACH FRUIT LOAF
1 cup raisins
Ph cups dried apricots,
quartered
Y2 cup dried pitted
cherries
1 cup slivered almonds
1 cup matzah cake meal
Y2 cup potato starch
1 teaspoon cinnamon
1 teaspoon nutmeg
1 /2 cup oil
1 /4 cup water
1 tablespoon honey
1 cup sugar
4 eggs
Preheat oven to 325F.
Grease a loaf pan, approx. 9 1/2
by 5 by 3 inches.
In medium bowl, mix to-
gether raisins, apricots, cher-
ries and almonds. Add mat-
zah cake meal, potato starch,
cinnamon and nutmeg. Make
a well in center and stir in oil,
water and honey. In electric
mixer, whisk sugar and eggs
until thick and light, about 4
minutes, and fold into fruit
mixture. Spoon into prepared
loaf pan and bake in preheat-
ed oven for 60 minutes or
until dry in center (test with
toothpick.) Turn out of pan
and cool on wire tray. Makes
1 loaf.

DATE-FIG BARS
1 cup sugar
3 eggs
1 teaspoon vanilla
extract
> 1 cup matzah meal
1 tablespoon potato
starch
1 cup chopped dates
1 cup chopped figs
1 cup chopped walnuts
Topping: 1 teaspoon ginger
mixed with 2 tablespoons
sugar
Preheat oven to 325F.
Grease two 8 by 8 inch baking

pans. In medium bowl, whisk
together sugar, eggs and
vanilla. Add matzah meal,
potato starch, dates, figs and
walnuts and mix well. Divide
mixture in half and spread
into prepared pans. Sprinkle
with topping mixture. Bake
in preheated oven for 45 min-
utes until nicely browned and
firm. Let cool in pans for 15
minutes before cutting into
bars. Finish cooling on wire
tray. Makes 24 to 30 bars. ❑
