. . . sounds fast, yet
homespun. They seem to con-
jure thoughts of apron-clad
housewives, pot holders in
hand, in front of a steamy
rack of oven-fresh delicacies.
My versions, however, can be
prepared easily by a 90s
sneaker-clad cook just before
a jog around the neighbor-
hood after a day at work. And
I can't imagine -a more ver-
satile baking choice. They can
be served with breakfast,
lunch, dinner, dessert or for a
snack. Some muffins are even
being used in place of bread
for creative lunch or appetizer
sandwiches. Try using the
orange muffins with thin-
sliced smoked turkey and
chutney for a wonderful treat!

SYLVIA'S FAMOUS
BRAN MUFFINS
2 cups crackling oat
bran cereal
1 cup all-bran fiber
cereal
1 cup flour
1 tsp. baking powder
1 tsp. cinnamon

1 tsp. baking soda
scant 1/2 cup brown sugar
1 whole egg
2 egg whites
1 /4 cup oil
11/4 cups buttermilk
1 tart apple, peeled,
cored and diced
1 large ripe banana,
mashed
% - 1 /2 cup raisins, optional
Combine first 7 ingredients
in a large mixing bowl. In
another bowl, beat the eggs,
adding the oil and butter-
milk. Mix well and pour into
the dry ingredients. Fold in
the apple, banana and raisins.
Pour into greased muffin tins,
filling each almost full. Bake
at 400 degrees for 25 minutes.

FABULOUS ORANGE
MUFFINS
1 cup sugar
1 /2 cup margarine, room
temperature
2 eggs
2 cups flour
1 tsp. baking soda
1 /2 tsp. salt
1 cup buttermilk
grated rind of 1 orange
1 cup raisins
1 /2 cup chopped pecans
Glaze:
juice of 1 orange
1 /3 cup sugar
Make a batter of the first 7
ingredients in a large mixing

bowl. Fold in the rind, nuts
and raisins. Pour into 12
greased muffin tins. Bake at
350 degrees 25 to 30 minutes.
For glaze, combine the juice
and sugar in a small sauce-
pan. Bring to a boil for just
about 1 minute. Pour hot
glaze over hot muffins in tins.
Cool thoroughly.

SUDIE'S BANANA
BREAD
11/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup wheat germ
3 small ripe bananas,
mashed
1 /4 cup buttermilk
1 /4 cup oil
4 egg whites
Stir together flour, sugar,
powder, soda and salt. Add
wheat germ and mix. Add re-

maining ingredients and beat
until well blended. Place in a
greased 8 by 4-inch loaf pan.
Bake at 350 degrees for 1
hour.

ZUCCHINI BREAD
3 cups flour
1 tsp. baking soda
1 tsp. salt
3 /4 tsp. baking powder
1 Tbsp. cinnamon
4 eggs
2 cups sugar
1 cup oil
2 cups unpeeled grated
zucchini
1 cup raisins mixed with
2 Tbsp. flour
2 tsp. grated lemon peel
1 cup chopped walnuts
Sift together the first 5 in-
gredients. In another bowl,
beat eggs; add sugar and oil,
mixing well. Blend into dry
ingredients alternately with
the zucchini. Mix well. Fold in
the raisins, peel and nuts.
Divide into 2 greased and
lightly floured 9 by 5-inch loaf
pans. Bake at 350 degrees for
55 minutes. ❑
