Use within two months, es- pecially in humid weather. • Olive oil is flavorful, and a small bottle goes a long way. Store at room temperature. Extra sticks of butter of margarine may be frozen. The Equipment Think small. Don't be fooled by glossy advertise- ments for pots and pans "you can't live without." At one point, my kitchen tools consisted of a kettle, and two skillets, one 7-inch, the other 10-inch. Soups, stews, pasta in sauce, fruit compotes and puddings were all cooked to tasty per- fection. The number of serv- ings determined which skil- let to be used. Don't skimp, but don't splurge on a matched set of wildly expensive equipment — most of which will be much too large and will nev- er be used. Besides, where would you store it all? Instead, buy the best you can afford, one piece at a time. Bake and serve dishes should look pretty and hold 1-2 servings. Your best bet are those that are both oven- proof and microwave safe. Here are some sugges- tions on how to stock the basic kitchen. Add more equipment as you go along. • Kitchen utensils — selec- tion of spatulas, ladles, wooden spoons, a slotted spoon, small whisk, kitchen scissors (for snipping pars- ley to cutting chicken), measuring cups and spoons, and a can opener. • Knives — cheap ones are useless, good ones are ex- pensive but worth every dol- lar. Start with a small par- ing knife and a large heavy chef's knife with a broad, straight blade. • Appliances — electric food processors, toaster ovens and coffee makers are avail- able mini-size. They all take up little counter space, and are time and energy effi- cient. The toaster oven may be used for baking. You might never use the range again, except for company cooking.
