Call 354-6060 [pi z In 0 N CHICKEN TAGINE WITH CILANTRO COUSCOUS 1 pound cooked chicken, diced 2 tablespoons all-purpose flour 2 tablespoons sesame or vegetable oil 1 /2 teaspoon minced garlic 1/8 teaspoon ground ginger 1 cup mixed dried fruits 4 ribs celery, cut in 1-inch pieces 1 cup thinly sliced fennel 1 large zucchini, sliced 1 /2-inch thick 2 cups apple juice 1 package (10 oz.) couscous, prepared according to package directions 1 /2 cup cilantro, coarsely chopped Coat chicken with flour and fry in hot oil in large skillet. Add garlic, ginger, dried fruits, celery, fennel, zucchini and apple juice. Bring to sim- mer, cover and cook for 15 to 20 minutes until vegetables are cooked and dried fruits are plumped up. While tagine is cooking, prepare couscous according to package directions. Stir in 1/2 cup coarsely chopped cilantro. Place couscous into a large, shallow bowl, making a hollow in center.
