readers have called in
with some recipe re-
quests. Here they are:

BROCCOLI SOUFFLE
3 tablespoons butter or
margarine
4 tablespoons flour
11/2 cups milk
6 egg yolks
1 tablespoon chopped
fresh parsley or 1
teaspoon dried
1 tablespoon chopped
fresh or frozen chives
teaspoon salt and 1/8
teaspoon pepper
4-5 tablespoons grated
parmesan cheese
1 cup cooked broccoli,
chopped finely
8 egg whites, stiffly
beaten
Grease a 6-cup souffle dish
and tie a "collar" of folded,
greased paper around to ex-
tend 1 to 2 inches over the top.
Preheat oven to 350 degrees.
Melt butter and add flour,
stirring until smooth. Do not
brown. Whisk in milk slowly.
Continue whisking over me-
dium heat until sauce is
thick, smooth and just coming
to boil. Remove from heat and
cool for 10 minutes. Whisk in
1 egg yolk at a time, whisking
constantly until combined.
Add parsley, chives, salt, pep-
per, cheese and broccoli. Mix
a few rounded tablespoons
stiffly beaten egg whites into
sauce mixture, then gently
fold in the rest. Spoon into
prepared souffle dish. Do not
push down or try to flatten
mixture. Gently place in cen-
ter of preheated 350F oven.
Bake for 35 to 40 minutes or
until it has risen high over
the dish and does not shiver
when tapped. Serve at once.
Serves 4 as main course, 6 to
8 as side dish.

VEGETABLE KUGEL
3 medium sized white
potatoes, peeled
1 large sweet potato,
peeled
2 carrots, scraped
1/2 cup frozen peas
1 medium sized onion,
finely chopped
1/2 cup coarsely chopped
fresh parsley
i/2 cup matzo meal
1 /4 teaspoon salt
1/8 teaspoon pepper
4 tablespoons margarine,
melted

2 eggs, lightly beaten or
3 egg whites, stiffly
beaten
Note: Egg whites only are for
low-cholesterol diets.
Preheat oven to 375
degrees. Generously grease a
1 1/2 quart baking dish. Grate
potatoes and carrots on large
side of grater, or use food pro-
cessor with grater blade. Mix
together in large bowl with
peas, onion, parsley, matzo
meal, salt and pepper, melted
margarine and eggs. (If stiffly
beaten egg whites are used,
add last, folding in gently.)
Spoon into prepared dish.
Bake in preheated 375 degree
oven for 40 to 45 minutes un-
til firm in center, nicely
browned and crisp at edges.
Serves 6.
Note: If browning too fast,
place a sheet of aluminum foil
lightly on top. ❑

Men's Groups
Set Celebration

The Adat Shalom Men's
Club will join the men of Con-
gregation Beth Achim in a
Chanukah celebration Dec.
16 at Borman Hall.
The men will meet 9 a.m. at
Adat Shalom for breakfast
and then go to Borman Hall
to entertain and visit with
the residents. A Chanukah
sing-a-long is planned.
Those interested in par-
ticipating should call the

Israeli Singer
In Concert

Aleynu/Aish HaTorah will
host the Detroit appearance
of Israeli singer Jo Amar in
concert 8 p.m. Feb. 23 at
Groves High School
auditorium.
Jo Amar is known for
Israeli and Sephardic songs
such as "Salah Shabati' and
"Barcelona."

Southfield Men
Plan Luncheon

Southfield Senior Men's
Club will hold their luncheon-
entertainment meeting 12:30
