Paint No•Cholesterol Chanukah Cookies By LESLYE MICHLIN BORDEN If you are looking for an educational and entertaining activity to do with your children for Chanukah, try baking no-cholesterol cookies they can paint. Once they have decorated the cookies, they can give them to their grandparents and friends as artistic and thoughtful childmade gifts. All you have to do is provide the opportunity by making the cookie dough that follows or preparing your own favorite rolled cookie dough recipe. If you want to lower fat and cholesterol content, which is probably good for your kids and you, as well as good for the grandparent recipients, follow these easy guidelines: OMIT EGG YOLKS Use egg substitute instead of whole eggs. USE MARGARINE Buy a margarine that does not contain the tropical oils — palm, cocoa, and coconut. These are the only vegetable oils that contain saturated fat, a major contributing factor to high cholesterol levels. LOWER FAT RECIPES Notice the amount of margarine or oil in the recipe you finally select. Divide that amount by the number of cookies you make from the recipe. This tells you how much fat there is in each cookie. Try to find a recipe that uses the least amount of fat per cookie. AVOID NUTS Do not pick a recipe that contains nuts. Most nuts are very high in oil. EDIBLE PAINT Prepare edible paint by combining egg yolks, water, and food coloring. This is the only time it's okay to use egg yolks! Of course, there is very little on each cookie. Provide as many paint jars and brushes as there are children, since the kids will be so intent on doing this activity that sharing might be difficult. Children can paint cookies faster than you can roll them out and bake them. So have plenty of dough on hand. Your friends and family will appreciate the effort that went into the whole production, especially if the children give the decorated cookies to their grandparents. Make plenty of extras, as some may be "ruined" and the kids will want to eat them on the spot. Happy painting! NO-CHOLESTEROL ROLLED CHANUKAH COOKIES 1 cup safflower margarine or canola oil 2 /3 cup sugar 1 /4 cup egg substitute (equal to one egg) 1 teaspoon vanilla 2 1/2 cups unbleached flour 1 /2 teaspoon salt Cream margarine (or oil) and sugar until light and fluffy. Add the egg substitute and then the vanilla, mixing thoroughly. Combine flour and salt. Blend into the creamed mixture. For easier rolling, chill dough several hours or overnight. When you are ready to bake, heat your oven to 350 degrees. Roll dough on a lightly floured surface to 1 /4 inch thickness. Cut into desired shapes. Place close together on an ungreased cookie sheet. (Cookies will not spread.) Bake 8-10 minutes. Do not let them get brown. Cool on a wire rack. Decorate with Egg Yolk Paint. Makes 6 dozen 2-inch cookies. Remember that the yellow color of the egg yolk will affect the color of the paint. If the paint gets too thick, add a little more water. Extra paint may be stored in the refrigerator and used at a later time. EGG YOLK PAINT Blend one egg yolk with 1/4 teaspoon water. Add food coloring.
