TRACY'S TRICKS
1 /4 pound (1 stick) butter
1 /4 cup granulated sugar
pinch salt
3 /4 cup all-purpose flour
about 2 tablespoons jam,
any flavor
Preheat oven to 350°F.
Cream butter and sugar
thoroughly. Add salt. With
mixer at low speed, gradually
add flour and mix until blend-
ed. Drop by rounded tea-
spoonfuls onto an ungreased
cookie sheet, at least one inch
apart. Bake for 8 minutes.
Remove from oven. Using a
teaspoon, make an indenta-
tion in center of each cookie.
Return to oven and bake for
7 minutes longer or until
browned at edges.
As soon as cookies are
removed from oven, place a
dab of jam in each indenta-
tion. The filling will melt
slightly from heat of cookies.
Cool slightly before sampling.

`Chic' Chicken
Avocado, Grapefruit and
Pomegranate Salad
Cenci (deep fried pastry
knots)

`CHIC' CHICKEN
1 (4-6 oz.) boneless chicken
breast, skinned
1 tablespoon flour (any
kind)
1/8 teaspoon oregano
salt and pepper
2 tablespoons oil
1 cup frozen green beans
1 cup all-natural spaghetti
sauce
1 cup vermicelli, cooked
and drained
Cut chicken breast into
strips about 1/2 inch wide. In
shallow dish, combine flour,
oregano, salt and pepper. Toss
chicken pieces in flour mix-
ture. Heat oil and cook
chicken over medium heat, 2
to 3 minutes on each side, un-
til cooked and lightly
browned. Place in single serv-
ing au gratin or microwave-
safe dish. Stir in green beans

and pour spaghetti sauce
over. Spoon vermicelli around
edge of dish to make a border.
Cover with wax paper and
heat in microwave at High for
1 to 2 minutes until hot.
Quick Tip: 4-6 oz. pre-
cooked chicken nuggets or
chicken breast may be substi-
tuted to eliminate cooking
chicken from scratch.

AVOCADO,
GRAPEFRUIT AND
POMEGRANATE SALAD
1 /2 avocado, unpeeled
1 tablespoon lemon juice
1 /4 cup grapefruit sections
2 tablespoons
pomegranate seeds
1 cup watercress, washed
Remove seed from avocado
and brush cut surface
with lemon juice to avoid
discoloration. In small
dish, gently combine
grapefruit with pome-
granate seeds. Spoon in-
to cavity. Arrange on a
bed of watercress. Serve
with a vinaigrette
dressing.

ric scraps, and refers to

the varied shapes of these

pastry fritters.

4 oz. prepared puff
pastry
vegetable oil for frying
confectioner's sugar
Roll out pastry very thinly.
Cut into strips about 3 /4 inch
wide and 4 inches long. Tie
each strip in a loose knot.
Pour 1 inch vegetable oil into
a heavy, deep skillet. Fry a
few pastry knots at a time for
about 5 minutes until puffed
and golden, turning often.
Drain on paper towels and
dredge with confectioner's
sugar. Serve with your
favorite coffee. Makes 4 to 6.
