Call 354-6060 100 FRIDAY, NOVEMBER 30, 1990 TRIPLE DECKER SANDWICHES For each child: about 1/4 cup cream cheese (preferably low fat) 1-2 teaspoons honey 1/8 teaspoon vanilla extract 2 slices whole wheat bread, crusts removed 1 slice white bread, crusts removed finely chopped dried fruit such as pineapple, mango, dates In a small bowl, mix together cream cheese, honey to taste and vanilla until cheese is of a spreading con- sistency. Spread 1 slice whole wheat bread with half the cream cheese mixture. Sprin- kle with one kind of chopped dried fruit. Top with a slice of white bread and spread with remaining cream cheese mix- ture and another kind of chopped dried fruit. Lightly press second slice of whole wheat bread on top. Cut into finger shapes or on diagonal. Variations: 1. Rollups: Using a rolling pin, flatten each slice of bread and remove crusts. Spread each slice with cream cheese mixture and chopped fruit, leaving a little space at the top and bottom. Roll up like a jelly roll and fasten with a toothpick. May also be sliced, sushi-style. 2. For very young children: Provide each child with several slices of whole wheat bread and cookie cutters. Let each child cut out desired shapes and garnish each with cream cheese, peanut butter, raisins, etc. This recipe makes an easy dough for children to work with. It may be made into tra- ditional challah shapes or formed into rolls and baked in a muffin pan. A nutritious bread sure to be a family fa- vorite. "ANY-AGE" GRANOLA CHALLAH 2 packages dry yeast ( 1/4 oz each) 1 /2 cup warm water 1 teaspoon honey or brown sugar 1 /2 cup oil 1 h cup honey or brown sugar 3 eggs 2 teaspoons salt 11/2 cups hot water 3 cups whole wheat flour 3 cups all-purpose flour 1 cup granola additional flour for kneading 1 egg mixed with 1 teaspoon water sesame, poppy or sunflower seeds Preheat oven to 375F. Grease a tray of muffin pans or a baking sheet. In a small bowl, mix the yeast, warm water and 1 teaspoon honey or brown sugar. Set aside in a warm place until the yeast bubbles. In a medium-sized bowl, blend the oil, 1 /2 cup honey or brown sugar, eggs, salt and hot water. In a large mixing bowl, place 11/2 cups each of whole wheat flour and all-purpose flour and the granola. Make a well in the middle and stir in yeast and oil mixtures with a wooden spoon. Add enough of the rest of the flours, in equal quanti- ties, to make a thick dough. Turn onto a floured surface and knead, adding additional flour as necessary to prevent sticking. Continue kneading for about 5 minutes or until the dough is 'earlobe' con- sistency and smooth. Transfer to an oiled bowl, cover and let rise 45 minutes or until doubled. Punch down, let rest 5 minutes, then form into desired shapes. Place in pre- pared muffin pans or baking sheet. Brush with egg-water mixture and sprinkle seeds on top. Bake in preheated 350F oven about 25 to 30 minutes for muffins, 45-50 minutes for loaf, until browned and sounding hollow when lightly tapped on base. Makes 12 bread "muffins" or 1 loaf.
