half with banana-peanut but-
ter mixture. Sprinkle with
raisins and chocolate chips.
Cover with top half of roll and
press lightly. To make a "but-
terfly" sandwich, cut roll in
half, then place rounded
edges of top half to center, to
resemble butterfly wings.

HENNY PENNIES
(3-4 years)
For mini-pancake
mixture:
Y2 cup biscuit mix
1 tablespoon wheat germ
1 egg
2 tablespoons milk
oil for frying
For topping:
1 egg
1 tablespoon baby food
squash
pinch salt
1 teaspoon butter or
margarine
In a small bowl, combine
biscuit mix and wheat germ.
Make a well in center and add
egg and milk. Mix with forIi
until ingredients are court
pletely moistened. Drop by
teaspoonfuls onto a hot, oiled
skillet. Cook over medium
heat until small bubbles
begin to appear and burst on
surface, 2 to 3 minutes. Turn
over and cook other side un-
til golden. Cool and place a
rounded teaspoonful of cooked
egg topping on each "pen-
nycake." Makes 8.
For topping: Whisk egg,
squash and salt together.
Melt butter in small skillet
it and pour in egg mixture.
Cook over medium heat, stir-
ring constantly until creamy,
1 to 2 minutes. Use as above.
Quick Tip: 1/2-inch thick
- slices of warm, cooked potato
may be substituted for pan-
_ cakes.
