In a large skillet saute
onion, celery and apples in
margarine until onion is
transparent. Add applesauce,
breadcrumbs, nuts, salt and
pepper. Soak dried cherries in
boiling water for 10 minutes.
Drain and add to mixture.
Stuff mixture loosely into the
turkey cavity.

DOUBLE BAKED YAM
CASSEROLE
4 pounds of yams
1 stick (1/2 cup) unsalted
butter
1 /2 teaspoon each:
allspice, cinnamon,
ground ginger
1 /4 teaspoon nutmeg
pinch of cloves
salt and pepper to taste
Pre-heat oven to 400 de-
grees. Generously grease 8 to
9 cup souffle dish.
Make a small slit in each
yam and bake until soft. Let
yams stand until easy to han-
dle then scoop out pulp into a
food processor bowl or mixing
bowl. Add all other ingre-
dients and puree until smooth
and blended. Pour into
greased souffle dish and bake
uncovered for one hour at 325
degrees.

NAVAHO FRY BREAD
2 cups flour
2 teaspoons baking
powder
1 /2 cup ground sunflower
seeds
12 drops Coltsfoot tea
concentrate (strong
herbed tea may be
substituted or your
local health food
shop can order this)
1 cup cold water
24 tablespoons corn oil
Mix flour, sunflower seeds,
and baking powder until
blended.
Mix coltsfoot concentrate
into one cup of cold water.
Gradually add water/tea
mixture to flour mixture un-
til a dough ball is formed.
Knead until the texture is
smooth.
Place in a covered bowl at
room temperature for 2 hours.
Remove dough to a floured
surface. Shape into 3 large
rounds or many smaller indi-
vidual rounds.
Roll them into circle shaped
about 1/2-inch thick. Sprinkle
additional whole sunflower
seeds on top and cut 2 deep
parallel slits across the top of
the circle.
Heat oil in a heavy .skillet
and fry 2 to 3 minutes or
golden brown on each side.
Remove from skillet and
drain on paper towels. Eat
when warm and dip in pure
maple syrup. ❑
