DONOR LUNCHEON

JELLY DONUT ROLL
1 tbsp. dry yeast
3 tbsp. sugar
31/4 cups warm milk
(separated)
21/2 cups all purpose flour
2 egg yolks
touch of salt
pinch of cinnamon
pinch of nutmeg
11/2 tbsp. softened butter
apple or strawberry
preserves
vegetable oil
granulated sugar
Dissolve yeast and sugar in
warm milk. Place flour in
bowl and add yeast mix, egg
yolks, salt, cinnamon, nut-
meg and knead well. Add but-
ter and knead until dough
is elastic.
Cover and let rise 1 1/2 hours.
Sprinkle flour on table and
portion out to 2 1/2 oz. balls.
Let rise again 15 minutes.
Pour 2 inches of oil in a
heavy skillet. Heat to 375
degrees. After dough has
risen 1/3 in size, drop into hot
oil — 4 to 5 at a time. Turn
when brown. Drain on towels.
Insert each donut with jam
or preserves of your choice
and roll in sugar and serve
warm. ❑

Grated peel of 1 orange
% cup chopped, dried
figs
Frosting:
2 oz. cream cheese,
softened
3 tablespoons butter or
margarine
2 teaspoons orange juice
concentrate
Few drops of red and
yellow food coloring
2 cups sifted powdered
sugar
1 /4 cup chopped dried figs
In large electric mixing
bowl, stir together flour,
sugar, baking powder, soda,
cinnamon and salt. Add oil,
eggs, carrots, pineapple,
orange peel, and figs.
Beat 2 minutes on medium
speed.
Spoon batter into 16 muffin
cups greased and dusted on
bottom with flour or into
paper liners.
Bake at 375 ° 25 to 30
minutes or until tester in-
serted in center comes out
clean. Cool on rack.
For frosting, in medium
bowl, blend together cream
cheese and butter until light.
Beat in orange juice concen-
trate and coloring. Gradually
blend in powdered sugar un-
til it is of spreadable con-
sistency. Stir in figs. Spread
cupcakes generously with
frosting. Makes 16.
