Heat the remaining butter in a skillet and in this saute the mushrooms for 5 to 6 min- utes. Transfer the mushrooms to the casserole with the kasha, stir well and serve immediately. CABBAGE AND BEET SOUP 3 cups beets, peeled and chopped finely 11/2 cups onion, chopped finely 1 /2 cup carrots, chopped finely 3 cups beef or chicken stock 11/2 cups cabbage, shredded finely 3 tbs. butter or parve substitute juice of 2 small lemons In a large kettle place the beets, onions and carrots and barely cover with boiling water. Simmer gently, on a moderate flame, covered, for 20 minutes. Add the remain- ing ingredients, cover again and simmer for 15 minutes more. Pour into individual bowls. -) TURKEY WITH APRICOT STUFFING 1/2 lb. dried apricots, pitted 1 cup port wine 2 cups dried prunes, pitted and halved 1 /4 cup butter or parve substitute 2 large onions, chopped coarsely 2 stalks celery, without leaves, chopped finely 1 tsp. sage salt and pepper to taste 1 /2 cup pine nuts 1 cup beef stock 1 turkey, dressed In a mixing bowl, soak the apricots overnight in the port wine. With a slotted spoon, remove the apricots and set aside. Reserve the wine. Soak the cracked wheat in 4 cups of water in a separate bowl for 2 hours and then drain well. Melt the butter in a large heavy skillet; in this, saute the onion and celery until the onions are translucent. Add the cracked wheat and saute for 5 minutes more. Season with the sage and salt and pepper; add the prunes, apri- cots, pine nuts and stock; sim- mer, uncovered, for 20 minutes. With this mixture, stuff the bird.
