Along with new shoes and haircuts, the designer lunch box is ex- alted. Ghostbusters, 'Menage Ninja Turtles and Batman logos lead the pack! The preschool crowd has the option of a sophisticated, packaged microwave meal or homemade foods in micro- wave safe containers that are reheated at school by their caregivers. Some of the pack- aged options are delicious but a bit high in sodium (read labels). Microwave-safe containers of soup, spaghetti and meat- balls and French fries are just some of the favorite choices. Use the leftovers from the previous, evening's dinner (cut-up roast chicken, pasta with carrot circles) then add a granola cookie, fresh fruit and beverage to assure your child of a warm, well- balanced lunch. riots should have their sand- wiches cut into quarters in clear baggies; beverages in in- dividual spill-proof cardboard packs with straw attached stay fresh until opening. Bite- size fruit (grapes, pineapple chunks, etc.) make Lunch for little fingers easier to handle. First-graders make the transition from lunch box to school cafeteria this year. Piz- za, hamburger and spaghetti have always been popular items on the school menu while fish and beef stew still rank last. Here are four help- ful hints when packaging their lunch boxes on those days: 1. Hard to hold items are usually rejected. (Sloppy Sandwich) 2. Familiar foods, not liver pate, makes the grade. (Egg Salad) 3. Small portions of many items are recommended. (A small taste of each will help to insure a balanced lunch.) 4. Let the children help lunch. their prepare (Neatness is not important.) The Half-Moon sandwich can also be a vehicle for a fruit and cheese combination, sprinkled with cinnamon for dessert. Pitas pockets are easy to hold and make good circles for a mini-pizza. Packaged Ruth Samuels is a writer in Pennsylvania. granola cookies usually con- tain more sugar than other cookies. This recipe uses brown rice syrup which doesn't give the hyper-sugar- jump to young children that sucrose products give. HALF-MOONS Filling (makes 4 servings) 1 can salmon or tuna (6% ounces) 1/2 cup grated cheese (Swiss, cheddar, American) 2-3 tablespoons mayonnaise % cup chopped celery 1 tablespoon sunflower seeds Moon Dough 1 can refrigerator biscuits (8) 1 egg, lightly beaten % cup topping: crushed corn flakes, wheat germ, seed, etc. Drain liquid from tuna. Break up tuna with clean fingers. (Children love this job.) Add celery, cheese, sun- flower seeds and mayonnaise. Mix together until blended. Separate biscuits, putting two together side by side. Flatten and connect with the palm of hand to create one large cir- cle. (Let the children help; if dough tears it is easily press- ed together again.) Put tuna mixture in center and fold biscuit in half. Seal by press- ing with a fork around the edges. Brush with egg and sprinkle with toppings. Place on a lightly buttered cookie sheet and bake at 350 degrees for 20 minutes. When cool, wrap in foil or plastic wrap. Refrigerate un- til you leave for school. Place in lunch box.
