6 Tbsp. salad oil
Lettuce leaves
3 oz. MOX LOX
3 tsp. capers
Lemon wedges
6 tomato slices
Thin sliced red onion
rings
Whisk together mustard,
vinegar, tarragon, salt and
pepper. Slowly add oil while
whisking until combined. For
each serving: arrange lettuce
on 3 plates and top each with
2 slices of MOX LOX, one tea-
spoon capers, lemon wedges,
tomato slices and red onion.
Drizzle with dressing. 3
servings.

CANAPES
3 slices dark rye bread,
toasted
c. unsalted butter,
softened
1 Tbsp. fresh minced dill,
or 1 tsp. dried
1 Tbsp. fresh chives, or 1
tsp. dried
1/2 tsp. horseradish
3 oz. MOX LOX, cut in
half to make 12
pieces
1 lemon, thinly sliced,
each slice cut into
quarters
Fresh chives
Remove crusts from each
bread slice and cut into four
triangles. Blend softened but-
ter, herbs and horseradish.
Spread toasted triangles with
herb butter; top with MOX
LOX slice (folded) and gar-
nish with lemon slice and
chives. 12 canapes.

PASTA
13/4 c. heavy cream
1 Tbsp. Scotch whiskey
(optional)
3 Tbsp. cream cheese
Tbsp. butter
Salt and pepper
1 lb. fettucini, cooked,
drained
3 oz. MOX LOX, cut in
pieces
1 yellow bell pepper,
roasted, peeled, cut
in thin strips
Heat cream and Scotch over
medium heat until reduced to
11/2 cups. Add cream cheese
and 2 tablespoons butter;
cook until slightly thickened.
Season to taste. Toss hot pasta
with 2 tablespoons butter;
add MOX LOX, peppers and
hot sauce. Gently combine
and serve with chopped fresh
dill if desired. 4 to 6 entree
servings; 6 to 8 appetizer ser-
vings. 0
