I'm not certain, but I'll bet they are the number two all- American favorite summer fruit. True, they are not as stur- dy as apples and their season is significantly shorter. De- mand, however, has made them available about six months of the year from California, Florida and other far-off locations. You can savor peaches' delicacy by canning them. My preference is to "pie or cake" them. And I was determined to combine my two favorite flavors in the chocolate-peach creation. Although my tasters were sure they were about to grow "peach fuzz," the result was a delicious marbled peach cake that everyone loved. Experts say that we are in the peak of an excellent peach season this year. So next time you visit a supermarket or fruit market, think extra peaches and try some of these delicious recipes. CHOCOLATE MARBLED PEACH CAKE 1 stick butter, softened 1 cup sugar 2 eggs 1 tsp. vanilla 2 cups flour, mixed with 1/2 tsp. baking powder 1 cup sour cream 1 tsp. baking soda 4 oz. chocolate chips, melted about 6 ripe peaches, peeled and sliced cinnamon/sugar mixture Cream butter and sugar. Add eggs and vanilla and beat well. Add flour. Mix together sour cream and baking soda. Add to batter and beat until smooth. Remove one cup of batter and combine with the melted chocolate, beating well. Combine the sliced peaches with some cin- namon/sugar mixture, de- pending on sweetness of fruit. In a small 7-inch tube or springform pan or 8 to 9-inch square greased pan, place 1 layer of half the white batter on bottom. Add spoonfulls of half the chocolate mixture. Then layer half the peaches. Repeat process, ending with Peaches. Sprinkle with addi- tional cinnamon/sugar. PEACH/BLUEBERRY CRISP 2 cups (about 4 medium) ripe peaches, peeled and sliced 2 cups fresh blueberries, washed and stems removed about % cup sugar (depending on tartness of fruit) 1 Tbsp. lemon juice 1 /4 cup flour % tsp. cinnamon % tsp. mace or nutmeg Topping: % cup oats % cup flour 1/2 cup light brown sugar % cup melted butter Combine fruit, sugar, lemon juice, flour and spices. Place in a buttered 8-inch square pan. Mix topping ingredients and place over fruit. Bake at 375 degrees (350 for glass pan) for about 35 minutes. 8 servings. PEACH CAKE % stick butter 1% cups flour 1 tsp. baking powder 2 Tbsp. sugar 1 egg yolk beaten with 2 Tbsp. milk 4 cups ripe peaches, sliced Topping: 3 /4 cup sugar 1% Tbsp. flour 2 Tbsp. butter 1 h tsp. almond extract V4 tsp. nutmeg % tsp. cinnamon Combine first 6 ingredients and mix well. Spread into a greased 9-inch square pan. Cover dough with sliced peaches. Sprinkle with the combined nutmeg and cinna- mon. Combine the first 4 in- gredients of topping with a fork or pastry blender and crumble over peaches. Bake at 375 degrees for about 1 hour. 6 servings. ❑
