ly slice the rest. Add the slices
to the pan. Return fish to pan
and continue cooking until it
flakes easily. Lay fish on a hot
dish. Stir pureed mango into
pan juices and spoon over
fish. Serves 4.
LAHUHUA
1 oz. yeast
3 cups lukewarm water
1 tablespoon sugar
3% cups all-purpose
flour, sifted
% teaspoon salt
5 tablespoons melted
butter or vegetable
shortening
Dissolve yeast in a little of
the water. When it is frothing,
combine with the rest of the
ingredients. Mix well, cover
with a cloth and leave to rise
in a warm place for 1 hour.
Mix again, recover and leave
for another hour.
Use a small, non-stick
skillet (7-inch) to cook
lahuhua. Start each pancake
in a cold skillet, using about
1/2 cup mixture spread over
bottom, then cook for 2
minutes over medium heat.
Move skillet to a very low
heat and continue cooking for
another 4 minutes. Cook on
one side only. These are
spongy, savory and tradi-
tionally served with soups
and stews.

/2 cup Miracle Whip salad dressing
1/4 cup lemon juice
1 tablespoon dijon mustard
2 teaspoons dried tarragon leaves,
crushed
1
1 teaspoon freeze-dried chopped chives
1 teaspoon grated lemon peel
its teaspoon white pepper
1 to 11/2 lb. halibut, salmon or sword-
fish fillets or steaks, 1-inch thick
Mix all ingredients except fish. Pour over fish.
Marinate in refrigerator 2 hours. Drain, reserving marinade.
Place fish on greased rack of broiler pan or grill. Broil or grill over low coals,
uncovered, on both sides until fish flakes easily with
a fork, brushing frequently with reserved marinade.
3 to 4 servings.
Prep time: 15 minutes plus marinating time
Cooking time: 15 minutes

FROSTED ROSES
A luxurious and special
garnish for desserts.
10 unblemished roses, half
open with stems
4 egg whites
4-5 tablespoons water
2 cups castor sugar
(superfine)
Choose mostly red roses
which have not been sprayed.
Pick from your own garden.
Rose petals are edible and
tasty.
Thoroughly stir (do not
whip/whisk) the water into
egg whites and dip heads of
roses into mixture. Move
about so that the petals are
completely coated. Now stand
stems in a bowl and leave for
10 minutes. Using sugar
sifter, dust flowers heavily
with sugar. Do the same with
any loose petals. Now hang
roses up by the stalks and let
dry for 2 days (in a cool, dry
place — not the refrigerator).
Place on a tray and let dry for
another 3 days. Store careful-
ly in an airtight container or
in freezer. Providing these are
well coated with egg white
and thoroughly dried, frosted
roses should keep up in a cool,
dry place for up to 6 months.
Note: Never dry or store in
refrigerator. ❑

Ira Silverman Resigns
As AJ Committee Exec
New York (JTA) — Ira
Silverman, executive vice
president of the American
Jewish Committee, has
stepped down after a year of
battling health problems.
"The American Jewish
Committee is an organiza-
tion struggling for its
health, and I'm a person
struggling for mine. That
partnership isn't as strong
as what's needed," Mr.
Silverman said in a tele-
phone interview.
Mr. Silverman was referr-
ing to financial cutbacks and
extensive restructuring
which AJCommittee has
undergone during the past
year, problems which have
been affected by instability
in the organization's profes-
sional leadership.
Mr. Silverman's resigna-
tion represents the sixth
time in the past decade that
AJCommittee has had to
search for a new executive
vice president.
Sholom Comay, president
of the AJCommittee, said
that the organization hoped
to replace Mr. Silverman "as
quickly as is humanly possi-
ble." He said that it was
hoped that a new executive
vice president would be in
place by early September.
"We hope to find a new
professional leader who will
exemplify the same qualities
of vision, competence and
leadership that Ira Silver-
man has given to the Ameri-
can Jewish Committee,"
Comay said.
Mr. Silverman, who took
the helm at AJCommittee in
June 1988, has suffered from
digestive ailments since last
summer. In December, asso-
ciate executive vice presi-
dent Shula Bahat officially
stepped into Silverman's
shoes as acting executive
vice president.
"We all had hoped and Ira
had hoped that he would re-
cover fully," said Comay.
"But that didn't happen."
Comay said that Silver-
man would remain affiliated
with AJCommittee as head
of the organization's In-
stitute for Human Relations.
