Tofu Quiche
On Catskill Bill

(JTA) — Tofu quiche,
vegetarian sushi and whole-
wheat organic pancakes are
not likely to have been your
grandmother's specialties.
But all of these dishes are
kosher and all are on the
new macrobiotic menu at the
New Brown's Resort Hotel, a
classic Catskills getaway
that is revamping its image.
Arlene Kastner, Brown's
new vegetarian macrobiotic
chef, is not just being billed
as a cook who can produce
healthy meals using all-
natural ingredients, but as
an accomplished gourmet
chef as well.
Kastner said she hopes her
specialties will help in-
troduce those who are
kosher to the world of
vegetarian and macrobiotic
eating.
"People whose culinary
tastes rim the gamut from
tempura to peanut butter
and jelly sandwiches — both
of which are macrobiotic, by
the way — can appreciate
this kind of cuisine,"
Kastner said.
But traditionalists who in-
sist on having their chicken
soup can rest easy.
Kastner's menu will be
supplementing, not replac-
ing, Brown's usual array of
dishes.
