4 tablespoons pitted
black olives, chopped
1 tablespoon pickled
capers, drained
2 tablespoons chopped
fresh parsley
2 tablespoons chopped
fresh basil
2 tablespoons chopped
green onion
% cup vegetable oil
salt and pepper
8-12 oz spaghetti, cooked
and drained
In a medium sized bowl,
mix tomatoes and olives. Stir
in capers, parsley, basil, green
onion and garlic. Pour in oil,
mixing well. Season to taste
with salt and plenty of pep-
per. Refrigerate for at least 2
hours. Quickly heat to just
under boiling before pouring
over hot cooked spaghetti.
Serves 4 to 6.
Serving suggestion: ched-
dar chunks, broccoli spears,
warm French bread.

SUMMER RICE SALAD
1 small zucchini, cut in
bite-size chunks
1 cup green beans, cut in
% inch pieces
% carrot, coarsley grated
1 small tomato, cut in
1-inch dice
% cup frozen peas,
thawed
% small yellow pepper,
seeded and diced
1 rib celery, chopped
1% cups cooked long
grain rice
2 cups shredded fresh
spinach
Dressing:
% cup vegetable oil
1 tablespoon vinegar
1 teaspoon Dijon-style
mustard
1 tablespoon light
mayonnaise
% teaspoon salt
Cook zucchini and beans in
boiling water for 3 to 4 min-
utes until raw look has disap-
peared. Drain well and place
in a large bowl. Add carrot,
tomato, peas, yellow pepper
and celery and mix. Gently
stir in cooked rice. Set aside.
In small bowl, whisk together
oil, vinegar, mustard, mayon-
naise and salt. Pour over rice
mixture and stir thoroughly.
Oil a 6-cup ring mold or bowl
or line with plastic wrap leav-
ing a generous overhang.
Spoon rice mixture into mold
and pat down gently with
spoon. Cover with plastic
wrap and refrigerate. Remove
from refrigerator and let
stand for 20 to 30 minutes
before turning out on platter.
Arrange shredded spinach
around to garnish. Serves 4
to 6.

in very small pieces to allow

maximum flavors to be ab-
sorbed.

FRUIT-FILLED MELONS
1 red apple, cored,
quartered and cut in
wafer-thin wedges
6 ripe black plums,
stones removed and
cut in 1-inch pieces
1 banana, thinly sliced
juice of 1 lemon
1 cup fresh pineapple,
cut in 1/2-inch dice
2 peaches, stones
removed and cut in
1-inch dice
% cup sweet vermouth
2 tablespoons honey
2 cantaloupes, halved
and seeded
1 /3 cup toasted almonds
12 cherries, with stems if
possible
Place prepared apple, plums
and banana into a glass bowl.
Drizzle lemon juice over and
stir lightly (prevents
discoloration of fruit.) Add
pineapple and peaches. Stir in
vermouth and honey. Cover
with plastic wrap and
refrigerate until needed.
To serve: Use a slotted
spoon to fill each cantaloupe
half with fruit mixture.
Sprinkle almonds over and
garnish each with 3 cherries.
Serves 4.
