SWEET CABBAGE FILL-
ING: Saute shredded cabbage
and onions in margarine un-
til soft. Season with salt, pep-
per and onion powder. Allow
to cool before filling pirogies.

blend that dries quickly. The shorts have wide
legs for a full range of motion, an elasticized
waist with drawstring, a nylon tricot inner
brief, two deep on-seam side pockets and
a rear hip pocket that snaps shut.
TO FILL PIROGIES:
On a well-floured board,
knead dough until texture is
smooth and workable.
Cut off large chunks of
dough; then tear off small
pieces, enough to form 1-inch
to 1 1/4-inch balls.
On a well-floured board,
with a floured rolling pin, roll
out each ball into a flattened
circle, approximately 2 to 2 1/2
inches in diameter. (Or, roll
out large chunk of dough in-
to large flattened circle and
use doughnut cutter with
center hole — cutter removed
to cut circles for filling.)
Put a rounded teaspoon of
filling in the center of each
dough circle. Cover the filling,
and carefully pinch together
the edges to seal in the filling.
Be careful not to get filling
on edges because it may pre-
vent edges from sealing.
TO COOK PIROGIES:
Place pirogies (1 to 1 1/2
dozen at a time) into large pot
of boiling water, with small
amount of oil added. Cook un-
til they float to the top, then
boil for an additional 3
minutes.
With a strainer, remove
pirogies from the boiling
water and place in a colander.
Place the colander of hot
pirogies in a bowl of very cold
water, running cold water
over them to cool them and
break starch formation,
which may cause them to
stick together. ❑
