SPINACH KNISHES OR
SPANIKOPITA
(A Middle East delicacy)
30 oz. frozen chopped
spinach, defrosted
and well drained
12 oz. shredded
mozzarella cheese
1 cup grated Parmesan
cheese
4 Tbsp. cold butter,
unsalted, cut into
pieces
lA cup minced green
onion
1/2 tsp. salt
dash of pepper
18 sheets phyllo dough
11/2 cups melted butter
2 cups plain bread
crumbs
Mix spinach, cheeses, but-
ter, onion, salt and pepper
together. Brush each of 6
leaves of phyllo with some
melted butter. Sprinkle bread
crumbs over each leaf. Lay
one leaf on top off the other
making a stack of 6 leaves.
Spoon Y3 of spinach filling
along the long edge of stack.
Roll up like a jelly roll. Make
2 more rolls using up dough
and filling. Place on a baking
sheet, seam side down. Brush
with more melted butter.
Bake at 325 degrees for 25
minutes. Increase
temperature to 400 degrees
for about 5 minutes to brown.
Cut on diagonal to make
about 45 pieces. Serve hot.

VEGETABLE STRUDEL
1 lb. zucchini, scrubbed
and shredded
6 Tbsp. butter, melted
3-4 green onion, chopped
10-12 oz. frozen peas
1 cup ricotta or cottage
cheese
1/2 cup freshly grated
Parmesan cheese
1 egg, lightly beaten
1 Tbsp. fresh dill,
chopped
3-4 sheets phyllo dough
1 /2 cup toasted bread
crumbs
sesame seeds for garnish
(optional)
Preheat oven to 350 and
lightly oil a baking sheet.
Place 2 Tbsp. butter in a
medium skillet and saute
green onions and peas until
tender. Remove from heat and
stir in zucchini, cheeses, egg
and dill. Brush each phyllo
sheet with most of the re-
maining melted butter. Stack
the sheets and sprinkle the
top one with the bread
crumbs. Place the vegetable

mixture in center of phyllo in
a loaf shape. Fold short ends
of phyllo over mixture, then
fold sides over it, and place
seam side down on prepared
baking sheet. Brush top with
remaining melted butter and
sprinkle with sesame seeds.
Bake for at least 15 minutes
or until pastry is golden. May
be sliced and placed on edge
of a large plate in a circular
pattern, filling center with a
colorful rice. 4 to 6 servings.
(To reduce calories, use low-
fat ricotta cheese, decrease
Parmesan to 13 cup, use less
butter and only 1 sheet of
phyllo.) ❑
