SWEET DELIGHTS!

The recipe for Aunt Katie's
Strawberry Shortcake came
from "Lilac Day," which
originated on the original
Hendrickson homestead in
Buffalo County, Neb. Baskets
of spindly, pencil-sized lilac
shoots were hauled across the
Missouri River from Iowa and
on into Central Nebraska
where they set in dense rows
along the homestead's farm-
yard.

AUNT KATIE'S
STRAWBERRY
SHORTCAKE
2 cups flour
2 tablespoons sugar
3 teaspoons baking
powder
1 /2 teaspoon salt
6 tablespoons butter or
margarine
3 /4 cup milk
Preheat oven to 400 degrees
F. In a medium bowl sift flour,
sugar, baking powder and salt
together. Add butter. Cut in
with two forks or a pastry
blender until mixture resem-
bles coarse crumbs. Add milk.
Stir with a fork just to
moisten and until dough be-
gins to come together in a
loose ball. Turn dough out on-
to lightly floured board or
pastry cloth. Knead dough
very gently 4 or 5 times. Use
fingers to gently pat dough
out until it is 1-inch thick.
Cut shortcakes with a 2 1/2
inch round cutter and place
on flat pan and bake for 15
minutes or until shortcakes
are lightly browned on top
and test done. Makes 6 to 8
shortcakes.

CREAMED FRESH
PEAS
WITH NEW POTATOES
12 new potatoes
2 to 3 tablesp000ns
butter or margarine
1 cup shelled fresh peas
2 tablespoons butter or
margarine
2 tablespoons flour
1 cup milk
1/8 teaspoon salt
Dash of pepper
Wash potatoes and boil un-
til tender, 15 to 20 minutes.
Drain and remove loose skin.
Toss hot peeled potatoes in 2
to 3 tablespoons butter until
each potato is lightly coated.
Place in a serving bowl and
keep hot. While potatoes
cook, cook peas in lightly
salted water and prepare
white sauce. In a small sauce-
pan over medium heat, melt
2 tablespoons butter. Stir in
flour. Gradually add milk;
and pour over potatoes.
Makes 4 servings. ❑
