Makes 1 cup. 5 8 1 - 8 1 2 2 RICE PUDDING WITH ROSEWATER 3 cups low fat milk 1 cup evaporated, skimmed milk (undiluted) 1 /2 cup rice 1 /2 cup sugar 1 /4 teaspoon salt 2 teaspoons rosewater or to taste 6 well-washed rosepetals for garnish (optional) Note: Rosewater is avail- able in gourmet stores or up- scale markets. Fill bottom of double boiler so that water barely touches the top of pan. Pour milk and evaporated milk into top of double boiler. Stir in rice, sugar and salt. Cover. Water in bottom pan should be sim- mering. Cook rice mixture for VA to 2 hours until pudding is thick and creamy, stirring occasionally. Remove from heat and stir in rosewater. Spoon into dishes and garnish with a rose petal (optional). Serve warm or chilled. Serves 6. Variation: For Apple Rice Pudding, stir in 1 large apple, thinly sliced, after 1 hour cooking time. RICE AND RAISIN KUGEL 6 tablespoons margarine, melted 2 cups cooked rice 3 eggs, beaten 1 cup evaporated skim milk, undiluted 1 teaspoon vanilla 1 /3 cup sugar Y2 cup golden raisins cinnamon to sprinkle Preheat oven to 350F. Grease an 8x8x2-inch baking dish. Set aside. In large bowl, place melted margarine, rice, eggs, milk, vanilla, sugar and raisins. Mix well. Nebraska History In Prairie Sampler A taste of Nebraska's history is preserved in the Prairie Kitchen Sampler, a cookbook that mixes Alice Mickish Hendrickson's recipes with 66 years of stories about farm life. James Potter of the Ne- braska State Historical Socie- ty says, "Alice's experiences will strike a familiar chord with anyone who treasures a rural, agricultural heritage." The cookbook is a family pro- ject involving Alice's daughter E. Mae Fritz, who wrote the book; granddaugh- ter Linda Fritz Corkery, who illustrated it; and grand- daughter Krista Fritz Rogers, who supplied editorial support. Prairie Kitchen Sampler combines 375 recipes for breads, cakes, pies, sausages and soups, with stories about barn dances, shivarees, butch- ering day, Lilac Day and more. Stories and recipes are presented in four periods: 1922-1934; 1935-1949; 1950-1974; 1975-1988. Each section is preceded by a sketch and description of one of the four farmhouses where Mrs. Hendrickson fed family, friends, threshers, corn- shellers and hired hands. Some recipes are just like Mrs. Hendrickson made when she was a young bride. However, various recipes have been updated to incorporate modern ingredients and cook- ing methods.
