THINK SPRING WITH WAIKIKI CHICKEN

Coat chicken with flour, salt and pepper, place in skillet:
brown in the oil over medium heat. Remove to shallow
roasting pan. Drain pineapple. Add water to pineapple
juice to make 1-1/2 cup liquid. Combine sauce ingredients
in pan, including liquid. Boil 2 minutes stirring constantly
until mixture boils and thickens. Pour over chicken. Bake
at 350°, uncovered for 30 minutes. Add pineapple and
pepper. Cover and bake another 30 minutes. Serve with
rice. Serves 6, 380 calories per 5-ounce serving.
