BASIC CROWD
PLEASIN' CHILI
1 pound ground beef
1 cup chopped onions
3 large cloves of garlic,
minced
1 tablespoon chili
powder
1 teaspoon ground cumin
Two 16-ounce cans
tomato sauce
2 cups cooked or canned
beans, rinsed and
drained (black, pinto,
kidney or a
combination)
1 /3 cup finely chopped
mild pepper rings
Chopped avacodo for
garnish
Sliced pitted ripe olives
for garnish

In a 10-inch skillet over
medium heat, cook beef,
onions and garlic with chili
powder and cumin until beef
is browned and onions are
tender, stirring to separate
meat. Spoon off fat.
Add tomato sauce and
beans; heat to boiling. Reduce
heat to low. Cover; simmer 10
minutes, stirring occasion-
ally. Stir in peppers; heat
through. Garnish with
chopped avocado and sliced
olives. Makes 5 servings.
Recipe may be doubled.
Medium-hot chili: Prepare
chili as above but substitute
cup seeded and finely
1 /3
chopped hot cherry peppers
for the mild pepper rings.
Garnish with chopped
tomato.
Hot chili: Prepare chili as
above but increase chili
powder to 2 tablespoons.
Substitute 1/3 cup seeded and
chopped hot jalapeno peppers
for the mild pepper rings.
Garnish with sliced green
onions and tortilla chips.
This spicy baked dip is as hot
as you want it to be. Choose
the preparation option that
fits your schedule: make
ahead, make at the last
minute, bake, cook in the
microwave.
Crisp pita chips go well
with this hearty dip.

SOUTHWESTERN
CHILI DIP
One 8-ounce package
low-fat or regular
shredded Cheddar
cheese
1 cup reduced-calorie
mayonnaise or salad
dressing
One 41/2-ounce can
chopped ripe olives,
drained
One 4-ounce can
chopped green chili
peppers, drained
