cup all-natural
spaghetti sauce
3 /4 cup mushrooms,
sauteed
3 /4 cup diced green
peppers, sauteed
3 tablespoons pitted
black olives, chopped
1 /4 cup grated parmesan
cheese
Preheat oven to 475
degrees. Prepare pizza dough.
Divide kneaded dough into 3
pieces. Roll each piece into 5
to 6-inch circle. Take one cir-
cle and brush half surface
with oil. Place 1/4 cup each
cheese, spaghetti sauce,
mushrooms and green pepper
on one half of dough. Sprinkle
1 tablespoon olives over. Fold
dough over filling to resemble
a turnover and press edges
together. Crimp edges with a
fork. Brush with oil and
sprinkle with a little
parmesan cheese. Repeat
with remaining dough. Bake
in preheated oven for 15 to 20
minutes until nicely browned.
Makes 3.
Note: Calzone may be fried
in hot oil, 1/2 inch deep, 2 to 3
minutes each side until gold-
en. Drain on paper towels.

VEGETABLE CUTLET
1% cups cooked brown
rice, packed
1 cup cottage cheese
% cup Muenster cheese,
shredded
1 cup chopped broccoli
1 cup carrots, grated
% cup peas
1 teaspoon salt
1 /4 teaspoon pepper
1 teaspoon cumin
1 egg, lightly beaten
3 /4 cup cornmeal
In large bowl, combine rice,
cottage cheese, Muenster
cheese, broccoli, carrots, peas,
salt, pepper and cumin. Mix-
ture should be stiff (add extra
rice or a little cornmeal if
needed.) Shape into 3-inch
egg-shaped cutlets. Dip into
egg, then coat with cornmeal.
Place on wire rack and chill
for a least 30 minutes.
In a large skillet, pour
enough oil to 1/2 inch deep.
Heat and quickly fry cutlets
on all sides until golden,
about 8 to 10 minutes total
frying time. Serve with Sweet
n'Sour Sauce. Makes 8.
SWEET N' SOUR SAUCE
1 cup canned peaches,
mashed
2 tablespoons honey
2 tablespoons cider
vinegar
1 tablespoon soy sauce
Place all ingredients in pan
and heat. Makes 1 1/4 cups.
