1 teaspoon cinnamon
3 tablespoons sweet
Passover wine
2 tablespoons honey
Place walnuts in food pro-
cessor and grind coarsely. Add
apples, dates, prunes and cin-
namon. Process until coarse-
ly chopped. Turn into a bowl
and stir in wine and honey.
Cover and refrigerate for up
to 3 days. Serves 8
to 10.

FROZEN KNAIDLACH
4 eggs
1/2 cup water
1/3 cup melted margarine
1/4 teaspoon white
pepper
1 teaspoon salt
1/8 teaspoon ground
nugmeg
2 tablespoons finely
chopped fresh
parsley
1 cup matzah meal

Lightly oil 2 baking sheets.
In a medium-sized bowl, mix
eggs, water, margarine, pep-
per, salt, nutmeg and parsley
Add matzah meal. Mixture
should be slightly sticky.
With wet hands, roll into
balls about 1 1/4-inch diameter.
Place on prepared sheets and
cover tightly with heavy foil.
When completely frozen, may
store in plastic bags.
To use: Pop into boiling,
salted water. Cover and sim-
mer gently for 20 to 25 min-
utes. Do not thaw before cook-
ing. Makes 18 to 20.

SWEET n' SOUR
SALMON TIDBITS
1 1/2 pounds salmon
fillets
1 1/4 cups water
1/2 cup vinegar
1/4 to 1/3 cup sugar (to
taste)

1/2 teaspoon salt
1/8 teaspoon white
pepper
1 onion, thinly sliced
Cut salmon in strips about
1 x 3 inches. Set aside. In
large skillet combine water,
vinegar, sugar, salt and pep-
per and stir to dissolve sugar.
Bring to simmer. Arrange sal-
mon in skillet in one layer.
Top with onion. Cover and
simmer 5 to 7 minutes until
cooked. Transfer salmon,
onions and half the cooking
liquid to a shallow dish.
To serve: Line salad plates
with lettuce. Arrange 3 to 4
pieces salmon on each plate
and garnish with a few rings
of onion. Serves 8 to 10.

Fennel has an unusual
licorice flavor. If preferred, 2
medium-sized onions may be
substituted in this recipe.
