This dish can be served hot as a side dish, or
as a dessert, sprinkled with sugar and cinna-
mon.

egg yolks
1/4 cup
orange juice
2 tsp.
grated orange rind
1 tsp.
salt
3 /4 cup
sugar
3 tbsp. melted shortening
3
egg whites, stiffly beaten
Soak the matzos in cold water for 5 minutes.
Drain well. Mash as fine as possible.
Beat together the egg yolks, orange juice,
orange rind, salt, sugar and 2 Tablespoons of
the shortening. Add the matzos and mix very
well. Fold in the egg whites thoroughly. Preheat
oven to 350°.
Grease a 2-quart baking dish with the re-
maining shortening. Pour the mixture into it.
Bake for 30 minutes, or until browned and set.
