UPSIDE-DOWN CAKE
1 /4 cup butter or
margarine
1 /2 cup brown sugar,
packed
1 /2 cup apples, cut in 1/2
inch dice
Y2 cup pears, cut in 'A
inch dice
1 banana, sliced thinly

11/4 cups all-purpose flour
1 cup sugar
11/2 teaspoons baking
powder
3 /4 cup milk
5 tablespoons butter or
margarine
1 egg
1 teaspoon vanilla
extract
Preheat oven to 350
degrees. Melt butter and pour
into 9 inch pie-dish. Sprinkle
brown sugar evenly over and
spread apples, pears and
bananas to cover. Set aside.
Place flour, 1 cup sugar,
baking powder, milk, mar-
garine, egg and vanilla into
electric bowl. Blend for 1
minute on low speed, scraping
bowl constantly. Beat 3 min-
utes at high speed, scraping
down often. Pour over fruit
mixture in pan. Bake in pre-
heated oven for 35 to 45
minutes or until wooden pick
inserted into center of cake
comes out clean. Cool 5
minutes. Invert onto serving
plate. Serve warm with a
dollop of ice cream or ice milk,
if desired. Makes 8 to 10 ser-
vings. ❑

chocolate chips
1 cup confectioners sugar
1 /3 cup evaporated milk
1 /4 cup (1/2 stick) butter or
margarine
3 /4 cup sugar
1 egg
1 teaspoon vanilla
11/4 cups flour
1% teaspoon baking
powder
1 /2 cup milk
Preheat oven to 350
degrees. Grease an 8 x 8 x
2-inch baking dish. Sprinkle
nuts over bottom of prepared
dish. In saucepan, melt
chocolate over lowest heat.
Gradually add confectioners
sugar and evaporated milk.
Spoon over nuts. Set aside.
Beat butter and sugar until
light. Beat in egg and vanilla.
Sift together flour and baking
powder and blend in alter-
nately with milk. Pour over
chocolate mixture. Bake in
preheated oven for 45 to 50
minutes until cake is firm to
touch in center. Let stand for
5 minutes before inverting
onto a serving plate. Cut in
squares. Makes 20 pieces.
