EMPIRE PURIM TURKEY WITH DRESSING

10 to 14 lb. Empire
1 cup apricot jelly
Kosher whole turkey
1 cup water -
16 oz. box parve crackers
salt to taste
2
carrots
pepper to taste
2
stalks celery
garlic powder to taste
1
medium onion
paprika to taste
1
egg
Stuff turkey with vegetable dressing (see below). Season turkey to
taste. Bake covered at 325° until one hour before done. Baste with
apricot glaze (see below). Continue baking uncovered until done,
basting frequently with pan juices.
VEGETABLE DRESSING: Wet 1 box parve crackers. Drain and
crush with fingers. Place carrots, celery, onion and egg in blender,
blend well. Combine vegetable mixture with crushed crackers. Add
salt, pepper, paprika and garlic powder to taste.
GLAZE: Combine apricot jelly with one cup boiling water. Simmer 5
minutes.
Serves 12-15, 260 calories per 4-ounce serving.
