Years of Baking Tra-
dition is a mixture of classic
Southern recipes and family
favorites, baking tips,
Southern culture and Martha
White history.
The 222-page cookbook,
written by the Martha White
Foods' staff of home econo-
mists, features 300 recipes
and includes 70 photographs.
The cookbook has recipes for
the staples of Southern life
like Country-Style Corn-
bread.
Southern Sampler also fea-
tures the favorite fare of nine
celebrity country music chefs,
including Earl Scruggs, Chet
Atkins, Grandpa Jones and
Tom T. Hall.
Martha White Foods, based
in Nashville, produces grain-
based products including
flour, corn meal, grits and
baking mixes.

• 2 cups sifted self-rising
flour
• 1/3 cup sugar
• 1 tablespoon grated orange
peel.
• 1 egg
• 3/4 cup orange juice
• 1/4 cup vegetable oil
• Orange Icing (recipe
follows)

Preheat oven to 400 degrees
F. Grease muffin cups. Stir to-
gether flour, sugar and
orange peel in mixing bowl.
Beat egg in separate bowl;
stir in orange juice and oil.
Add liquid mixture to dry
ingredients, stirring until just
blended. Batter will be
slightly lumpy. Spoon batter
into prepared muffin cups,
filling each 2/3rds full. Bake
for 18 to 20 minutes or until
golden brown. Remove. Makes
about 12 medium muffins.

ORANGE ICING

• One 3-ounce package cream
cheese, softened
• 2 tablespoons sugar
• 1 teaspoon grated orange
peel
• 2 teaspoons orange juice

Combine cream cheese,
sugar and orange peel in
small bowl; blend well. Add
orange juice and stir until
smooth.

CREAM CHEESE
POUND CAKE

• 11/2 cups (3 sticks) butter or
margarine, softened
• One 8-ounce package cream
cheese, softened
• 3 cups sugar
• 6 eggs
• 11/2 teaspoons vanilla
• 3 cups sifted all-purpose
flour
• 1/4 teaspoon salt
• Confectioners' sugar
(optional)

Beat butter and cream
cheese together in mixing
bowl until well blended. Add
sugar to mixture and cream
until light and fluffy. Add
eggs one at a time, beating
well after each addition.
Blend in vanilla.
Sift flour and salt together;
blend into creamed mixture.
Spoon batter into prepared 12
cup bundt pan. Bake for 1
hour and 15 minutes at 350
degrees or until toothpick
inserted 1 inch from edge
comes out clean. Cool in pan
for 5 minutes; turn out onto
wire rack and cool completely.
Dust with confectioners'
sugar, if desired. Makes 12 to
15 servings.
