FRIDAY, FEBRUARY 16, 1990

I

ike Ilitch knows a
lot about teamwork
. . . from his baseball
playing days to being owner of
the Detroit Red Wings.
As chairman of the board of
Little Caesar Enterprises,
which include the Fox
Theater and other high stan-
dard ventures, he has sur-
rounded himself with people
who make up what many con-
sider to be one of the best
teams in carry-out and sit-
down dining.
All are a part of Mike's suc-
cess . . . and he and wife
Marion are the first to
acknowledge this factor of
much pride.
Seeking another world to
conquer, Mike opened his first
full-service gourmet pizza
restaurant, America's Pizza
Cafe, Aug. 14, 1989 . . . and
made certain two additions to
his team were among the best
. . . managers Peter Travis
and David Riding.
This isn't your ordinary
type of pizzeria . . . so warm,
intimate and cozy, yet light
and airy with seating for 100
at booths and tables and
another 12 at a long,curved
counter . . . Soft teal leather-
style booths, white venetian
blinds on the large windows,
chairs of white and teal .. .
with the teal coloring carried
out onto the outside brick.
The upscale, contemporary
setting features 13 varieties
of individual-sized gourmet
pizzas, 13 pastas, six salads
and a luscious dessert cart.
America's Pizza Cafe on
Telegraph between Nine and
10 Mile roads, is an essence of
cleanliness . . . Tiles surroun-
ding the open kitchen ovens
gleam with shining
brightness . . . The counter
seats are far from those diner
types seldom with enough
room . . . These were design-
ed for comfortable dining
with length and width con-
sidered in the America's Piz-
za Cafe concept.
The American classic decor
of America's Pizza Cafe has a
drop ceiling with copper strip-
ing around it over the open
kitchen area, oak ceiling in a
dining sector, aluminum
strips over the booths, etc.
Its gourmet pizzas are
baked in a wood-fired oven
and evoke much imagination
. . . from Teriyaki chicken to
Polynesian to Oriental
chicken to lemon garlic
chicken or shrimp to

mushroom pepperoni to
Italian sausage to bar-b-q
chicken to garden veggie to
BLT with same ingredients
and more of the great tradi-
tional sandwich to New York-
style cheese and garlic to
Mexican burrito with its
pesto beans, seasoned
chicken, mild salsa, sour
cream, etc.
Pastas served by polite and
efficient waitpersons range
from the traditional to in-
novative like mustard
tarragon chicken linguini and
others.
Hours of operation at
America's Pizza . Cafe on
Telegraph are seven days a
week, Sunday through Thurs-
day, 11 a.m. to 11 p.m., and
Friday and Saturday until
12 midnight.
A second America's Pizza
Cafe is slated to open around
the first part of April . . . a
3,000-square foot dining spot
along the northwest side of
the Fox Theater building.
Loyalty has also played an
important role in Mile Hitch's
success . . . His employees
get it from him and eagerly
give it back . . . Mike's word
has always been his bond .. .
a handshake in so many
instances means so much.

His team of experts . . . and
they are that . . . include
daughter Denise Ilitch Lites,
senior executive vice presi-
dent; Charley Jones, chair-
man; Rob Elliot, vice presi-
dent of creative; daughter
Lisa Hitch Murray, vice presi-
dent of corporate communica-
tions and national training;
Brian Freshwater, vice presi-
dent of restaurant concepts;
Ann Case, regional
marketing director; Al Sebas-
tian, regional media relations
supervisor; Bob Massey, ex-
ecutive vice president of fran-
chise sales; Susan Sherbow,
director of media relations;
Jim Lites, executive vice
president of Olympia Arenas,
Inc. . . . and a host of many
other wonderful Ilitch-ites.
With a team like this work-
ing alongside him, Mike Il-
itch has been able to obtain
the wonderful dreams of suc-
cessful endeavor endowed
upon him.
The America's Pizza Cafe
concept presents all the ingre-
dients that go into a good
casual dining experience.
What better salute to a man
whose ability to surround
himself with key personnel
has humbly built an empire.
While enjoying your
gourmet pizza or pasta, look

for the two life-sized papier
mache-sculpted waitresses,
Darlene and Irene, sitting
and taking a break.
Wine, beer, sparklers, fruit
coolers, and espresso and
capuccino coffees are
delightful offerings.
Dining at America's Pizza
Cafe is a very pleasant adven-
ture . . . The best of so many
worlds have been conjured in-
to the gourmet pizzas . . .
with tasteful delight awaiting
each bite.
To be sure, it is a winner.
BURNING OF shopping
center where Roman Terrace
was located on Orchard Lake

The Hitch
management team
has come up with
a winning concept.

Road and 12 Mile almost com-
pletely demolished the
restaurant landmark . . .
However, co-owner Bob
McDonald will still honor his
catering commitments . . .
bookings he has through 1991
. . . plus continuing his fine
outside catering . . . He's look-
ing for a kitchen and
somewhere to hold the affairs
. . . If you can help Bob, call
him at Mr. Joe's during the
day, 356-7133, or at home,
661-9365 . . . Both phone
numbers are given with his
permission.
THOSE WHO enjoy food
grazing or sampling of
various delights found the
gourmet food lineup at recent
second Michigan the Boun-
tiful by City of Southfield and
Michigan Chefs de Cuisine
Association right up their
alley.
Last year's crowd of about
800 was whoppered this year
to the tune of between 900
and 1,000 people.
The tables galore had
centerpieces with orchid
plants and large-sized
balloons . . . A pink gazebo
with lace top was in the
center of the Southfield
Pavilion, as a lass strummed
her harp throughout the day.
Almost 40 restaurants and
dessert specialists were
represented . . . plus wines,
coffees and mineral water.
Chefs galore watched their
preparations being devoured
with ecstasy . . . Michael
Houlihan, chef de cuisine at
London Chop House,
presented linguine with
tomato basil butter mixed
with pieces of grilled chicken
